As an English ex-pat living in Norway, I long ago started making my own pies, as Norway is a pie-free zone! But I do like your channel, as it gives a lot of novel and innovative ideas. Whilst making these pies, I noted that I had ran out of gravy granules, so I substituted them for Bisto chip shop curry sauce granules, and half a teaspoon of curry powder- Result? Lovely! I make something very similar and I have a few variations you can try. 1) Curry Pie, just add a tablespoon of hot madras powder after the onions. Great winter time dish. 2) Mince and Ale, when making the stock, replace the 200ml of water with 200ml of Guiness. In fact, try replacing water with Guiness in any beef dish that comes in its own sauce, it's especially good in slow cooker diced beef casserole. Make lots of casserole, eat it and freeze 2 portions. These are perfect for making a midweek pie.

Long time watching but first time posting (I think). Best RUclips chef, bar none. I've followed a few of your recipes and never been let down. So thank you, John. Hello Mr. Kirkwood, Thank you for this recipe. I'm going to make the hot water butter/lard pastry today and refrigerate it ovenight. However, the filling is probably going to be closer to your Chicken and mushroom pie filling, in that I'll be using mushrooms, but I'll be substituting pork in for the chicken. Along with the two stars of the dish, I'll add onions, carrots, and celery. Again, thank you, thank you, THANK YOU for all the fine recipes that you share with us. I NEVER fail to learn something from your videos. I take the things that I learn from your videos and combine them with things I've learned elsewhere. For example, taking two pieces of wax, or parchment paper, flouring one and putting the pastry to be worked on it, then flouring the top of the pastry and putting the other piece of wax/parchment paper atop it and rolling it out. I'll probably turn these into pasties.

I tried out this today, and I have to say it kicked my butt. Making the crust and filling was pretty easy, but putting these together was not. My bottom crusts never came over the lip of the baking tins no matter how much I pushed. Right now they're in the oven and I'll see how they turn out.... 45 minutes later. They came out of the oven, and even though I had major difficulty getting the dough over the tops, they still popped out of their tins easy as you please, and yes they taste great. I know cooking things gets better with time and practice and I will make these again. Thanks John

@@JohnKirkwoodProFoodHomemade Thank you. I have been using ground beef, and with a double recipe I use 1/2 beef; 1/2 lamb just to cut cost. The taste is wonderful. Also, I put the cooked meat in a food processor... I hope that doesn't upset you! : ) I do the same for onions. I love onions and I swear I can hardly taste them so I use two large onions. I dice and then food processor them as well prior to cooking the meat of course. The dough comes out perfect. Best meat pie dough EVER. I will admit I O-mit the gravy. I've tried and tried and my gravy comes out terrible. Just don't have the 'touch' I suppose. Just the pie is fine so I won't push the issue anymore. In fact I'm having that for lunch tomorrow (5 12th) funny enough. Thank you for your expertise!!! and generosity.

Delicious! I was recently in the UK and really enjoyed the various meat pies so I've been searching for recipes. I'm not sure why they are not more widespread here the US. We have "pot pies" but they tend to be mostly gravy and veg, with little meat. Only in a few areas are real meat pies and pasties common fare.

I made these yesterday, absolutely amazing! I want to freeze some as obviously didn’t eat six pies 😂. What is the best way to reheat after defrosted? A loose bit of foil over the top and in the oven? As an English ex-pat living in Norway, I long ago started making my own pies, as Norway is a pie-free zone! But I do like your channel, as it gives a lot of novel and innovative ideas. Whilst making these pies, I noted that I had ran out of gravy granules, so I substituted them for Bisto chip shop curry sauce granules, and half a teaspoon of curry powder- Result? Lovely! I make something very similar and I have a few variations you can try.
1) Curry Pie, just add a tablespoon of hot madras powder after the onions. Great winter time dish.
2) Mince and Ale, when making the stock, replace the 200ml of water with 200ml of Guiness.
In fact, try replacing water with Guiness in any beef dish that comes in its own sauce, it's especially good in slow cooker diced beef casserole. Make lots of casserole, eat it and freeze 2 portions. These are perfect for making a midweek pie.

If you've never tasted the genuine article, I believe they can be bought online somewhere (not sure how far away from The Potteries you are)

I'm going to make the hot water butter/lard pastry today and refrigerate it ovenight.
However, the filling is probably going to be closer to your Chicken and mushroom pie filling, in that I'll be using mushrooms, but I'll be substituting pork in for the chicken.
Along with the two stars of the dish, I'll add onions, carrots, and celery.
Again, thank you, thank you, THANK YOU for all the fine recipes that you share with us.
I NEVER fail to learn something from your videos.
I take the things that I learn from your videos and combine them with things I've learned elsewhere.
For example, taking two pieces of wax, or parchment paper, flouring one and putting the pastry to be worked on it, then flouring the top of the pastry and putting the other piece of wax/parchment paper atop it and rolling it out. I'll probably turn these into pasties.

I tried out this today, and I have to say it kicked my butt. Making the crust and filling was pretty easy, but putting these together was not. My bottom crusts never came over the lip of the baking tins no matter how much I pushed. Right now they're in the oven and I'll see how they turn out....
45 minutes later. They came out of the oven, and even though I had major difficulty getting the dough over the tops, they still popped out of their tins easy as you please, and yes they taste great.
I know cooking things gets better with time and practice and I will make these again. Thanks John

@@JohnKirkwoodProFoodHomemade Thank you. I have been using ground beef, and with a double recipe I use 1/2 beef; 1/2 lamb just to cut cost. The taste is wonderful. Also, I put the cooked meat in a food processor... I hope that doesn't upset you! : ) I do the same for onions. I love onions and I swear I can hardly taste them so I use two large onions. I dice and then food processor them as well prior to cooking the meat of course. The dough comes out perfect. Best meat pie dough EVER. I will admit I O-mit the gravy. I've tried and tried and my gravy comes out terrible. Just don't have the 'touch' I suppose. Just the pie is fine so I won't push the issue anymore. In fact I'm having that for lunch tomorrow (5 12th) funny enough. Thank you for your expertise!!! and generosity.

Delicious! I was recently in the UK and really enjoyed the various meat pies so I've been searching for recipes. I'm not sure why they are not more widespread here the US. We have "pot pies" but they tend to be mostly gravy and veg, with little meat. Only in a few areas are real meat pies and pasties common fare.

My mum used to make a pie just like this , so 😋. If I wanted to freeze them would I freeze at the assembly stage ? Or can you freeze a fully cooked pie ? I recently made your hot water pastry but not sure if it freezes ok. Very easy pastry by the way so thank you 🙏
You can freeze them before or after. They still come out delicious. If you do freeze them before make sure they are fully defrosted before baking.

I made these yesterday, absolutely amazing! I want to freeze some as obviously didn’t eat six pies 😂. What is the best way to reheat after defrosted? A loose bit of foil over the top and in the oven? (Sorry if that’s a stupid question!)…can you microwave them to reheat? Or does that ruin the pastry? Thanks John….looking to see what to make next, your recipes are the best! ❤
Oven reheating is the best way as microwaving can make the pastry soggy.
