Ran across your channel while looking for pork pie tutorials, and damn if you weren't right there in your kitchen hand-blocking hot water pastry around a sawn-off rolling pin just exactly, and I do mean exactly, like my dad used to do in his bakery near Blackpool back in the '50's and '60's. Just like you said, dozen after dozen of them, at 3 or 4 per minute... day after day. Anyway, glad you're back. All the best, mate, and thanks for doing this.
