    When you drain the mirepoix you could save the soaking liquid to add to the soup. Just a little extra flavor! Super recipe!

    I recently started watching this channel and subscribed. In the absolute confusion of starting to can food I left a comment-question. They Got back to immediately. This couple and just so genuine and passionate about planning for the worst in an ethical way. They share their knowledge so generously. I absolutely love the no nonsense approach! I have been interested in food preservation and love veggie gardening but got so confused by all the complex instructions and useless information included on other channels. I am So excited started my canning and following the direction from Rose red have had far more successes than failures. Where I live in Australia we have had two weeks in 2021 without power due to a tornado and flood, (and we were cut of from town for 7 days with no phone,) so I am addicted to the ideas in this channel. It gets to expense when you get dodgy information on other channels and gave up as I was to scared I would poison my family. Brilliant channel absolutely wonderful and smart lady!

    In 1994, I was a manager @ a Taco Bell in Kingman, AZ. I was amazed how their refried beans were “made.” They come in a white bag, you dump them into a pan and add boiling water & then just stir it up. They rehydrated almost immediately. They look exactly like your dehydrated pintos. How about that? My first experience with “fast beans” and I didn’t even know it. 🤣🤣
    Being single, making a pot of beans for one (yes I can buy canned beans but I just love cooking from scratch), is a bit much. Freezing leftovers can be overwhelming, I get tired of beans real fast lol. So now I can satisfy my need to cook a pot of beans, take out what I need for a small recipe and dehydrate the rest for fast beans! I know I’m REALLY going to enjoy winter with the fast beans that I’ve sealed up! Absolutely an essential method that’s pocketbook friendly too! Thank you Dear Lady!! 😘🌹

    I can’t wait to try this. Got my beans soaking now. The last 3 recipes I have tried of yours have been awesome (pressure canning black bean soup, zucchini soup (OFF THE CHARTS!!), split pea soup) so it is a given this will be good too. I am making a fresh batch , and dehydrated batch. Only item I currently do not have dehydrated are the white. Thank you so much for your incredible dedication!! You have helped me tremendously this last year. I have gone from 2 days of food in my house to at least a year , probably more. I have made multiple mistakes & learn from every single one of them. It makes me proud that I have preserved such nutritious, healthy food and I am grateful to you for your guidance. ❤

    Pam, have you ever considered poking a tiny hole in the plastic ramekin lid and plastic bag so that when you vacuum seal you'll remove more air? Just a thought. Thank you for the video. Always a pleasure to watch!

    I was so afraid that I had done something wrong, with the way my “fast beans” in the dehydrator had come out, still hard and some “popped” it was so reassuring and refreshing to come across this video!
    Thank you for sharing this message.
    Mine aren’t pretty, but in an actual emergency they’re edible and filling and I’ve learned a little lesson from you!
    When I first started my journey in food preservation and emergency preparedness, I couldn’t understand the concept of “WHY? am I cooking and wetting things just to turn around and dry it back out”… it didn’t take me long to figure out less energy in an emergency situation so I could conserve and as a mountain search and rescue/avid outdoorsman it was lighter weight I had to pack in and out. I now do it for several mushers who want real foods on the trails!
    Also another reason why I started doing “fast beans” and “instant rice”! I spent an entire weekend cooking and drying various beans and assorted rices!”

    I made two jars of this soup mix, and tried one for lunch yesterday as the test run. Delicious!! So flavorful and hearty. I need more practice dehydrating and rehydrating, and this is a good start. Thanks!

    I would use caution with combining freeze dried and dehydrated items. The freeze dried items will pull moisture from the dehydrated items. I had this happen with dehydrated oats and freeze dried fruit that I packaged together. Within 3 months the fruit was a mushy mess and I assumed wet enough to cause problems. That said...I love your videos and your attitude about self reliance.

    This is great! If in a survival situations you could add more liquid and add rice, or orzo or noodles to bulk up this soup. I'll be prepping some jars of this for sure. Thank you for all the information you share.

    Thank you for sharing your fast bean soup mix. I personally much prefer freeze drying and dehydrated veg in soup mix ingredients rather than canning. I know canning is good too but a freeze dryer is so worth the investment. I was fortunate to be able to purchase one after selling my last homestead. I offer family and friends to bring their harvest and we can freeze dry it so they can have that option for their food pantry too.

    I so wish I could afford to buy Freeze Dryer. I'm now retired, single and on a fixed income so chances of ever getting one is very slim. I'm very happy to have my dehydrator at least, but I really like the way food comes out of the dehydrater! My neighbor has one, but hate to impose. Anyway, I love your videos Pam! I have watched others but I always seem to come back to yours. Thank you for all your time and effort to make for us!

    I am trying this for supper tonight. I'm not using the chick peas but am adding some canned chicken. If we like it, we will make up mylar bags of the mix for quick meals. We made several of the burrito mixes today! I am thrilled you are giving us goo recipes to use all the veggies and beans we have been dehydrating! Thank you!!!

    Wonderful!!! I am making a list of foods to freeze dry as soon as I get enough hours of sunshine. I love the idea of having a fast meal without having to heat the kitchen in the summer.

      @@rangerannie5636 I am powered by a solar system so no sun no power. I need sunshine to charge the battery bank to run the freeze dryer. It was a strange way to say that so you aren't ignorant just my not so plain explanation.

      @@lyndabuchholz1216 What's funny is I am familiar with solar energy, but my mind was trying to make a connection between sun drying and freeze drying. I have been curious about the power draw from a freeze dryer and I imagine it's quite large. You must have a big system!

      @@rangerannie5636 Actually the freeze dryer only draws a small amount more than a dehydrator. I was surprised, pleasantly though. I do have a fairly large system a bit over 9 kW. It works well but I wish it was a bit more so I could freeze dry in the winter when I have extra time to prepare the food. But we are working on that with a wind generator to add to the battery charging.

    This is the best bean soup I have ever tried! I have made it twice, and set up three more jars ready to go. I could eat this everyday. For the mirepoix I had made up some dried and ground into a powder so I just added a couple of teaspoons to the mix and it seemed to be about right. Thank you for another wonderful, useful idea for all of us.

    at the green tree grocer my daughter found me a container of Italian seasoning, for 10 dollars 28 oz. nice gallon size. i whirled that up in the blender to make a powder, as didn't like the whole herb pieces. I think though that McCormick uses a bit too much rosemary. I packed some for later and have a nice amount to use now. tasty sauces indeed!

    Very nice! I make a similar soup but have never added chick peas. Will certainly give that a try. Also, I add my spices in with my mirepoix ingredients when sautéing them, the spice flavor wakes up. I've been just wrapping them in a bit of plastic wrap but I like your little container idea. The aroma that will start wafting thru the room makes everyone hungry! I add bigger leaves of mixed dehydrated greens to the bottom of the bowls before putting soup in. Your adding to the soup just before serving is really a nice presentation. 👍👍

      You are so welcome! I think that is a good option. There are foods that I purchase in #10 cans instead of dehydrating or freeze drying as well--like the carrots shown in this video. It is a balance between the cost and the amount of my time if I do it myself!

    It's gotten to the point in my house when you post a new video and my hubby finds out, your channel is opened on the big TV the rest of life stops. This soup recipe is fantastic! a freeze dryer is going to be a tad down the road BUT the knowledge is ever present, besides I heard tell it too comes with directions 😊. Yes, the freeze dryer has directions. Make sure that you follow the directions explicitly and do not skip steps because it process takes longer (at least on the one we have).     Winco often has dehydrated mirepoix in the bulk bin section. It’s a huge time saver.

    Hi Pam, thank you for this. What I'd like to know is how you prepared the dry beans for the FD. Last night I finished cooking up 10 cups of dry chili beans; seasoned and simmered; cooled them and then refrigerated them over night because it was very late. I rinsed the beans this morning and filled each tray; they are currently in the freezer. My hope is that I will end up with loose, FD beans.

      I did them the same as I did the dehydrated Fast Beans. I soaked them over night then cooked them until done and spread them on the FD trays. They came out perfectly! I think your way will also work!

    Pam and Jim thank you for the Tuscan White Bean Soup Recipe. I have a question could I use my Powdered Tomato Skins instead of tomato slices. I really went overboard this summer and saved and dehydrated ALL the skins from the tomatoes.I sprinkled some in a couple dishes I made ,and the flavor was was great. I love to experiment, I haven't made the soup yet but I can tell by all the ingredients it will be delicious.
    Thank you again for sharing all your wonderful knowledge and expertise, I feel you have taught me a new skill that could save my life AND IT IS FUN.

    I Iove this! My only concern about putting the bouillian cubes inside each jar is the expiration date of the cubes will be sooner than the dehydrated or freeze dried beans, peas, and veggies. You will need to put that date on the jar. I keep extra jars of bouillian in my pantry for emergency use. It's easier to replace those if they expire first... IMO. Just food for thought.

    You can get most of the air out of the baggy by using a straw. Close the bag leaving just enough opening for a straw, suck the air out. I hold it so I can pinch the straw if I need more than one go. I do this all the time when putting things in the freezer in baggies to prevent freezer burn. It works quite well.

      @@RoseRedHomestead I’ve been freeze drying up a storm! Working on emptying the freezer.
      Eggs, grass fed milk, salmon fillets, peas, okra, paste tomatoes, fresh parsley, cilantro and aloe vera juice from the garden, leftover Mexican rice. All has worked out well. We also freeze dried a batch of eggnog for Christmas gifts.
      This week I’m working on freeze drying our own rabbit meat.

I’ve copied that and will probably add roasted red pepper powder to make my favorite hummus. I’ll try it both ways to see which I prefer. Storage space is an issue in current home. Yum! Appreciate you more than you know.

    I have several cans of beans that have dates that are best by early 2022. I am deciding whether to dehydrate or freeze dry them. Looks like freeze drying is the way to go. Thx

    Loved the video! Anxious to try the recipe. Dr Cantrel have you ever dehydrated ground beef?
    What is your opinion on doing that? There are lots of videos on doing it but I want to know what you think about it. I hope you and Jim had a very Merry Christmas! Ours was spectacular! A year ago my
    daughter-in-law was in ICU with covid. After 60 days in ICU and 45 days on a ventilator she came home. We felt very blessed this year to have our family together again for Christmas!

      I am so glad and relieved that your daughter is home after that harrowing experience. I can't even imagine what you went through. Such a blessing she is recovering. And what a wonderful Christmas that must have been for your family. The USDA does not recommend dehydrating any meat except jerky, so I don't do it at all.

      I have used both freeze dried fast beans and dehydrated fast beans and there is very little difference in cooking times.

    May I guess that perhaps the dehydrated beans were a bit overcooked? I cannot get a freeze dryer, so I will be experimenting with dehydrating. I am amazed that with as delicate as the freeze-dried beans were, that they did not get mooshy. What a wonderful recipe! Can't wait for more fast beans from you!
