A side research project for you for various recipes: I also make bean "flour" (powdered dry beans) from the quick cook beans. Along with "instant" refried beans from the ground pintos (I keep a preseasoned jar on the shelf so its ready to go), you can make "instant" hummus from the chick peas and there are lots of baked goods that use the bean flour.
I think the main thing to remember is that beans need to boil a minimum of 10 minutes at or above 185' to remove the bean toxin, esp kidney beans and then when the beans are tender, save the bean water for vegetable soup stock! but love dehydrating beans to use in quick meals! powdered bean paste for sweet bean buns, an oriental favorite! check out the uses for Miso and it doesn't just have to be soy beans either, it can be white beans and red beans.
I learned from Mary’s Nest-another fantastic channel-to soak beans for 2 days, changing the soaking water after one day. Normally I can’t tolerate eating beans at all, but 2-day soaking makes all the difference
Years ago when practicing food storage, I discovered accidentally that after soaking and cooking/boiling beans for just a few minutes - drain well, packed in Tupperware (it was decades ago. Lol), lids on and place in freezer. As long as they were frozen at least 48 hours two things happened: they cooked really fast like 15 mins AND most of “gas effect” was gone! I had forgotten about this trick until seeing your video today. Thanks so much for all you teach us! Note: I’m going to try my old method and then dehydrate. Might be best of both worlds. Sure will reduce storage space. Thanks again.
I have been dehydrating cooked beans for years and one thing I LOVE to do is throw the pinto beans in the VitaMix grain blender and powder the beans. I have also added dried peppers, onions, and herbs when I powdered it. All it takes to make bean paste/bean dip/refried type beans is to add a little boiling water to the powder. Add the water while stirring and stop when it is the consistency you want. Season to taste. It is quick and easy.
Hello! I am trying to understand your statements regarding making refried beans with boiling water. Just wanted to let you know, it's very hard to understand what exactly you do.
I've been making/using quick beans for several months and love the convenience. Another advantage of precooking/dehydrating beans is water consumption. Under off grid conditions, water usage is a concern, and beans require soaking, rinsing, cooking, rinsing. By doing all of that ahead of time, you save precious water resources.
How do you store these? In a vacuum sealed jar? Do you use an oxygen absorber or moisture absorber. Trying to learn and prepare at the same time. Thank you.
Leave it to Pam to figure out why one should soak, rinse, cook, and dehydrate dried beans so one would have on hand... dried beans. The first time I heard about this, I just assumed that some RUclipsrs had run out of ideas for content and dismissed the idea out of hand. Now, I understand the value of having them ready, and while I'm not a big fan of chick peas seeing you eat one as a snack has my wheels turning and my mouth watering. Excuse me while I go find a salty snack to munch on while I peruse my dried bean stash for candidates for my new dehydrating project 😄~ Lisa
Like you, I'm not crazy about chickpeas. But I have taken canned chickpeas, rinsed and drained them, seasoned them with chili powder and a bit of cayenne, and roasted them until crunchy. Addictive, and probably better for us than Christmas Chex mix. 😁
@@jujubee7351 knowing me, it was probably 350. There are recipes online and they seem to be running from 350 to 425. Mine were very dry and crunchy. Now I'm getting inspired!
I'm a hiker and have been dehydrating my homemade refried beans for years. They're so delicious and you can even eat them dry for a crunchy snack! Thanks for sharing and I love your gadget!
I grew up at sea level soaking then cooking beans/legumes, but when I lived in Colorado, I started simply cooking them in a crockpot and even though I live at 700 ft now, I still use my crockpot for them. I am anxious to precook beans and dehydrate beans, as I had with chickpeas, but I will cook them in a crockpot before the dehydrator. BTW, I made my first batch of ghee, thanks to you! I am so pleased with how it came out and am going to make much more. Thank you for also saying how variable the process can be. Fortunately, I had a mother who taught me to cook by showing me how things should feel and look, or simply to tell me to "Look at it!" when I had no idea what I was supposed to be looking for,(!) but it gave me a strong sense of judgment and instinct, as it were.
@@jerialice Only kidney beans. Thanks; I meant to mention that. I have done pintos, lentils, chickpeas, white beans, (Navy and Grt.Northern) with no ill affects.
Pam and Jim, Thank you for the work that you put into these videos. I have learned so much. I just finished my first batch of fast beans and as I was transferring them into a jar a few fell on the floor which our dog eagerly cleaned up for me. I checked to make sure these are safe for dogs and found out they are indeed safe for dogs. Now we not only have food security for us, but if need be can stretch out our storage of dog food as well.
This is coming at a good time for me. I’m dehydrating a lot of veggies for a variety of soups. I can’t wait for your Tuscan soup recipe in a jar. I like the idea of having beans ready to go in a grid down situation and it will use less water this way.
@@RoseRedHomestead I am very concerned about grid down. I live directly in hurricane pathway, right by the Atlantic Ocean (10 miles). We get a lot of very heavy tropical storms.
So glad to hear you’re on the mend. I have been making fast beans/bean powder for many years. I also make fast rice. Instead of buying instant rice I buy bagged white rice and cook then dehydrate.
Yes I freeze dry mine and it rehydrates beautifully! I keep it on hand for impromptu guests and meals. Pairs beautifully with freeze dried sliced chicken breasts and a salad - meal done! Add a dessert - freeze dried (but not rehydrated) ASTRONAUT ICE CREAM for the win. Those Neapolitan ice cream sandwiches are so gorgeous and scrumptious!
@@jenniexfuller I was just contemplating whether I was going to dehydrate or freeze dry to make fast beans. So glad I came upon your comment! Freeze drying it is!
Thank you Pam! You smiled at the end when you got the beans just how you like them. You have the prettiest smile! I'm so thankful for your videos. You gave me the steps and confidence to start pressure canning. I bought a dehydrator and am going to put up some fast beans. You've blessed me :)
Hey Pam, glad you are on the mend. I made canned pickled cauliflower for my mom tonight, and used so much of the knowledge I've gained from your videos to help guide me. This was something she remembered from her youth but didn't know how to make herself. You're really helping to preserve history that way! Thanks for all you do.
I just now found this. I have a large number of canned beans of various types I'm going to rinse and dehydrate. Should clear up storage space quite nicely. So happy to have found your channel. Thank you.
Can’t wait for your dehydrated bean recipes. I have lots of dehydrated navy, small red, small pink beans and also lentils dehydrated and have been looking for recipes.
Glad you are feeling better and on the road to recovery 😀. Excellent video, I must admit I've never heard of fast beans until now, poor Jim must have been salivating looking at those lovely re-fried beans. Looking forward to the soup video
Pam and Jim. I think you are being inspired with your videos. I get to thinking intensely about what to do about a certain aspect of my year supply and low and behold there is a video from Pam and Jim Cantrell EXACTLY about the concern l had. I am extremely thankful for your two and the work you are doing. You've got to know this.
I have passed this video several times but stopped today! Wow! I’m so impressed! I’m all over this process! We live all types of beans and I can’t wait to try this tomorrow! Thank you! I’m sorry I skipped this video for so long! Rose red, you just amaze me!!!!💖💖💖
So glad you’re feeling better, Pam. I’ve never heard of fast beans so this is very interesting to me and look forward to trying it. I don’t have a fast cooker so I’ll just have to cook them in the old slow way. I look forward to your videos they’re so informative. Tuscan soup sounds wonderful. May God bless and keep you both.
I am glad you are feeling better. I sure dread the day the grid goes down and I can't access your channel. Right now when I need information, the first thing I do is run to youtube and look it up on your channel. Waiting for your book!
Im all out of fast beans so im starting some tonight with the overnight soak. Its so easy and convenient to have beans as ready to go as canned. Thanks again for this great post! BTW, after pressure cooking, i drain the beans with my salad spinner to remove the maximum amount of water before loading the dehydrator to cut down on the drying time.
Another awesome lesson!! I have a small supply of beans that I'm going to work on per your guidlines, thank you. Plus You triggered the fact that preparng beans during a grid down situation would use up a LOT of precious water as well as time and energy. I do love your very clear and understandable information. I'm so sorry you've been sick, your voice does sound like you're still not feeling well. Prayers for your total recovery, and blessings to you!
Bless your heart. Many thoughts and prayers for you. Thank you for the fast bean test. I am so glad your brain thinks up all the wonderful recipes. Love your videos. 😃😃😃😃
I dehydrated red beans for the first time earlier this week and I was also surprised that they looked like popcorn, I ended up grinding them into bean powder. Good to know they're supposed to look like that for future reference. Also, I use my version of a wonder bag to cook my beans. I line a small cooler with beach towels. I did some experimenting with a thermometer and found that my set up will keep the beans above the minimum cooking temp for 4-5 hours. All I do is soak them for a good 24 hours, rinse, bring them to a boil, and skim the foam off. Then I just nestle it in the cooler with the lid on and let them do their thing for the 4-5 hours. I've done this about a dozen times and they turn out great every time👍 I'm looking forward to experiment with refried beans from dehydrated beans I usually make a big batch and freeze it in smaller portions but it would be nice to have a quick way to make smaller portions that I don't have to remember to thaw before I can use it.
Been meaning to comment in this....I just love it! I made great northern beans cooked all the way in the instant pot then dehydrated. I used them in chilli and they were just delicious! Now that the weather has cooled off I'll be making more GN's then pinto and navy. I can do other things while they process and look forward to using them more. The otherwise lengthy cooking time often stops me from making certain recipes. Thanks Pam & Jim!
So glad you are feeling better! I have had the exact same cold. 3 weeks in and my voice isn't 100%. Thank you for providing such educational and evidence based cooking content! And thank you and Jim for your commitment to your viewers. I am so glad I found your channel.
Thank you so much for sharing your experience! It's great to have these options! I did recently try freeze drying some black beans as an experiment and they held their shape beautifully. They rehydrated with room temp water so quickly I was shocked! Tasted great. I love following your channel and hope you're feeling fully recovered very soon!
Carrie: We have wondered how long it would take various foods to rehydrate after freeze drying and dehydrating. Now, You have answered that question for freeze dried black beans. Pam has her ups and downs. Today is a downer. Jim
Yes! You can season chick peas (I used rinsed store bought canned) and bake in oven at 350 for 20 minutes or so! I use olive oil, red pepper flakes light sprinkle, sometimes italian herb seasoning or dill. Endless possibilities. I don't have a multicooker so I would just cook beans on stove then dehydrate? Thank you!
Ha! I have been doing this for about 20 years +/-. I love having them on hand. You just invented my same recipe. It always comes out fabulous. Works well in burritos, and as nacho topping, or just as chip & dip. Great job👍🌺
I'm Soo glad you did this test as I myself was wondering the same and the part about the chick peas snack is especially what I was wondering about as well. Wonderful. I loved the part where you said your mind was thinking of all they ways you could use them. I do that as well. I call that the wheels turning in my mind. Easier to store probably than canning them as well. I think I'd mash some of those pintos slightly and add taco type seasonings for flavorful dehydrated refried beans. Cajun seasoned pintos and dehydrated cooked rice for Cajun beans and and rice. ECT. Thanks for trying it and letting us see the results.
So happy to find this tutorial. I'm starting to make some meals in jars and fast beans are expensive. Happy to know how to make them myself. Thanks for your wonderful video.
so glad to see this video. believe it or not, I had pulled some left over beans out of my fridge to dehydrate this morning. wonderful video and yes I like munching on dehydrated chick peas. I sometimes put some spices on mine for a more flavorful snack. hope you get to feeling much better over the Christmas season. God Bless to you and Jim.
I am so sorry you have been sick. That is the pits. Thank you for the Quick Beans video. My dehydrator came in and as soon as I can, plan on putting it to good use. I like the idea of dehydrating frozen veggies as they won't take up as much space as canned jars would. Take care of yourself!
Nice to see that there is no mistaking the precooked beans with regular dry beans. Also, how would you recommend storing them? And how much dry beans per serving? How much fast beans per serving? Thanks for using your limited voice to give us this useful info. We love all that we've learned from you. Happy Holidays.
I store them in jars and then vacuum seal that jars. I am guessing the self life would be at least 5 years or so. Serving sizes will vary according to who is going to eat them! With a little experimenting, you can figure out the right amount for the number of people who will be eating.
Thank you. I loved the kidney beans and more video too tonight. Been watching your videos over a year. I originally watched them for hours and learned a lot from you.
This is brilliant :). I would never have thought to cook them in the Instant pot… I am doing this in the next few days, and will wait eagerly for your ‘soup in a jar’ video.. thanks so much you guys, and I am happy to hear that you are on the mend Pam xo
I’m so glad to hear and see that you are better… I was truly concerned about your shortness of breath.. I look forward to your videos. You teach me things I didn’t know, you remind me of things I’d forgotten to and you inspire me to try new things that I might never have tried. Thank you!
Thank you for doing this video! You do so much! Even so, (lol) if you ever put all of this together in a book I would buy a few! I like “insurance” if the grid ever goes down and I know others in my family would love one, too. Just a thought ❤️ Again, thank you for all you already do!
I love your videos. I don’t have my mom anymore to help me can and preserve. Mom was very careful and safe. Canning and cooking with you and preserving, makes me warm inside. It’s just like I’m with my mom. May God Bless you!
Thank you so much for your videos! A couple of questions…do you think cooking the beans slower, perhaps in a crockpot, would reduce the popping open of the beans? Secondly, for older dry beans that have been stored for awhile, you mentioned adding soda to soften them (this was in another video). Do you add the soda while soaking or cooking them? What amount would you add? Once again, thank you Pam and Jim for taking your valuable time to educate all of us on such a variety of things.
great video. I had very good success dehydrating dessert hummus. a great snack 1 1/2 cups chickpeas or white beans 1/8 tsp salt 2 tsp pure vanilla extract up to 1/4 cup milk of choice, only if needed Sweetener of choice I use pure maple syrup 2-3 tbsp oats, flaxmeal, cocoa or raw cacao, pumpkin pie spices or almond flour as desired. dehydrate on fruit leather trays. I have also added at times cooked pumpkin or sweet potato, cinnamon etc.
Thank you posting this. I am going to try these. I think the quick pinto beans would make really good bean cakes. Beans with juice Flour and cornmeal ( I like more cornmeal for crispness.) Salt and pepper Chopped onion and or peppers. ( optional). Stir. The dough should be like cornbread batter consistency. Spoon into a skillet with hot oil or grease for fritters. Brown well on both sides. Enjoy
You are so amazing Pam! Thank you for all of your hard work, attention to detail and wonderful ideas. Praying for you and hope you continue to feel better soon.
Oh I wondered if you had been under the weather! I'm glad to hear that you are on the mend. Keep resting and take good care of yourself! We value you so much!
Thank you soooo much for doing this video. I just got my Azure bean haul yesterday and plan on putting them away for long and short term storage so this video is just in time! 🙌 I hope you are fully healed for the Holidays and the New Year!
I never knew that by rinsing beans -even from out of a can, you cut down on the intestinal gas beans can give some people. Also, dumb me, I didn’t soak my beans but just put dry beans with water into the instapot & I pressure cooked them for about 12 min & I didn’t notice any problems. We ate them right away so I didn’t preserve them. I’m excited to try dehydrating in my new machine that has multiple uses. I love your recipes! Thank you!
Nice job. I experimented with pinto and white beans, found that I loved having at the ready refried beans. Or with the white beans, hummus. Cooked with a spice yields a nice dh bean. I will try the chickpeas. With the pintos......fritters/cakes with whatever one wants to add. A bit of cornmeal, fried in ghee and you have a great meal there because of the protein. Pinto bean fritters are eaten alot here in the south when we have leftover beans. Leftover fish is great in pinto bean fritters. My Mom would tend to throw in any leftover small portions of meat she had, fed 4 kids and a meat and potatoes man very well.
@@laprealhayes8765 I do the original hummus recipe, which would be garlic, tahini, lemon juice, the white beans are just subbed for the chickpeas. But what I usually do with the white beans are garlic and cumin, adding in fresh chopped onion for texture. If you need to thin it, you can add mayo, sour cream or yogurt. This is really good drizzled over a taco salad, so think thinning it a bit. Or just layered in a refried bean dip. hth
I’m so happy to learn this , thank you. Also, I was blown away by how well seasoned your cast iron skillet was. It looked too perfect to be that well seasoned. I think I’m jealous.
Thank you for this video. You remind me of a very young version of my Irish Grandmother. Every time I watch you, I am happily reminded of her and her cooking :) Attempting my first batch of fast garbanzo beans right now. 2 questions: how to store these for the longest time possible, and is there some way to preserve bacon fat?
After I watched this video I tried making fast beans in the freeze dryer to see if they popped like yours did. I soaked red kidney beans and pinto beans for 24 hours then cooked them in my instant pot for 15 minutes on the kidney beans and 30 minutes on the pinto beans. After freeze drying they had a very small number of cracks but no popped beans at all. I will continue to try different varieties of beans but so far I’m pleased with the results.
Have you heard of the backpacking chef? He dehydrated whole meals, including non-vegetarian meals, for his trips. You would find his work very interesting.
I was all over his website when I first started dehydrating years ago. Loved it. To this day I still dehy ground beef. I'll have to pay his site a visit soon for a refresher. Thx for the reminder!
That is so funny , about 2 wks ago I thought about doing this .I also thought why not cook them all the way ,dry and make into powder.I'm still going to try.
We are still keeping, your recovery, in our prayers. Please take care of you first. We all love what you do, but, your well being is the most important thing. We call this "instant" beans, just like "instant" rice. Which is rice that has already been cooked, then, dehydrated. Very convenient. I have only done kidney & pinto beans. I'll have to try some others. Thank you for sharing your technique. Your the best. 😁👍🏻❤
Brenda: Thank you for your concerns. Pam is doing better, but some days she fluctuates up or down. She is ready to be well. Pam is now on Christmas break and has two weeks off. It sounds like all of us are on the same page as far as "fast" or "instant" beans/rice. Thanks for watching our videos. Jim
Oh how I love y'all! This will be a game changer for me and time restraints that are a weekly occurrence! Plus, I have a "savory tooth" (honestly, more like a set of savory teeth 😬 😅) and hummus is my "devil's food" so to speak 😋. Which of course, tends to reduce my wallet size! (If only it could flatten my mid section as well 😏) I would rather make my own to save money and create my desired recipe. Just last week I ran across a new recipe/flavor at Kroger's grocery, with carrot, apricot and Chipotle, on sale so I gave it a try. It was unexpectedly delicious! So even though I would rather save time and make a healthier (knowledge of true ingredients, also) versions, WHO has the TIME?! Thanks to you 2 dear souls, I do!! I can't wait to get started experimenting. Plus, I'm sure I will love the dry snacking treats as well. 2 bags are going in soak and then dry. So I can try new flavors in small batches until I get what I like the most. And just in time to possibly gift some to friends and family that have my same taste for Christmas! Again thank you so very much and God bless. P.S. Mrs R, I just wanted to share a remedy that my mom uses for laryngitis. It's the only thing that works for her, other than time. I'm sure you have knowledge of raw honey packaged with a big slice or chunk of the honey comb from the hive that it is collected from?! (I said it that way because, unbeknownst to us we have purchased some that had brand new comb that had only been "soaked/filled" with raw honey, but hadn't ever been close to the hive or a single bee. It didn't work for her so I just asked the seller what type it was so she could in the future not choose it. Like clover, elderberry...as in the source of nectar the bee's had the majority access to. And that is how I found out about the "virgin" comb being used. Reason given was: to better ensure the honey wouldn't sour by water content formed by condensation that happens with the storage of the comb, in a cooler, during the processing?!) So the remedy works only with "Real honeycomb", which she takes a piece about the size of a tablespoon, which will be much more because of the combs actual thickness. She holds it in her mouth and works all the honey out swallowing as she does (Be cautious due to the sweetness it can cause you to cough, or it does me at times when it's to much.) After most of the honey is removed, then she chews the comb until it's the consistency of a smooth chewing gum. And after all the "goodness" is gone she swallows the comb/wax. She has tried it without consuming the wax and it doesn't work for her or me either for another testimony. She passed it to me, so I always feel best about giving her the credit! I don't know of any wax/comb allergies BUT I do know there are some who have allergies to honey. Anyone that tries this, Disclaimer: Me nor my mother are neither doctors or medical professionals, so please do your own research and make your own informed decisions. Please make sure you are not allergic to raw honey and possibly the comb. Sorry I've written such a lengthy comment y'all! Have a great weekend and God bless.
Thank you for this information. I will have to find someone who works with bees in Florida , I really need to have this available in our house to try .💐Merry Christmas
@@lindadean6909 Your very welcome! I hope you can and will be prepared but I also pray you won't have to use it!😇❤ If you do find yourself needing it, I hope y'all have great results same as us. Merry Christmas!
We will be doing a video on hummus soon. I am experimenting with recipes. As a retired beekeeper, I am well acquainted with the benefits of honey and I love to put pieces of honeycomb in my mouth just as you describe! Thanks.
@@RoseRedHomestead That is a relief to find out, in a way, at least you know I'm not making it up. 😉 I'm somewhat at times a bit afraid to share this remedy as well as others. Some of the "looks and responses" I have gotten.............you wouldn't believe. 😁 My favorite one (not) so far was: "I don't delve into the realm of black magic, but thanks anyway!" Needless to say, I just left it alone. It was how to make sassafras tea, from the root of which you can dig yourself, as most people are aware. So I didn't bother to go any deeper into an explanation, it would have only lead to the same dead end we were already at, I felt. 🙂 I'm looking forward to your hummus videos and recipes. Thank you for all you share and God bless.
I soaked a whole bag of navy beans overnight, pressure cooked half of them in the IP for 15 minutes, and dehydrated them in my Breville Smart Air Oven under super convection today. Drying the beans @ 135 degrees only took 3.5 hours! The other half of soaked beans were combined with finely diced carrot, onion, celery and spices, and slow cooked until done while I had a nice sewing day. I sautéed my veggies in a tablespoon of butter in the IP before adding the other ingredients. What an easy and delicious way to have dinner tonight, and the beans for a dry soup mix which I will complete when I dehydrate more veggies, and add a vacuumed packet of spices. I so appreciate this one pot method of making two meals; one ready to eat, one ready to store! (Will it really take 10 hours to rehydrate those beans?) Thank you for all the great ideas, and please, please do take care of yourself and get well! We will all be very happy to wait for you - never fear! We are all hooked on RoseRed!
You can also do the same with rice and pasta. Pre-cook, dry and store. When rehydrating you only need to pour boiling water over and let it sit until ready.

Thank you for all your wonderful videos! I was wondering if freeze dried beans would be a good choice for your soups in a jar or for making fast beans? Thanks!
I’m going to try this with whole grains (spelt, wheat, barley, rye) and have “instant” whole grain pilafs and salads. I love to eat them, but am too impatient to make them often because of the long cooking times.
The grains work great, and can be cooked with 15 minutes boil time and about 10 minutes of standing time. Liquid measure is one to one. They can also be combined with other things wit the same cook time such as rice, quinoa, millet. I’m still working to get the seasoning to my liking.
@@mickeyhinkson1750 Thanks so much for coming back to report! I just bought two sample dehydrated grain meals at Big Lots, believe it or not. (I plan to try them out and copy the mix if we like them.) Trevijano brand, $2.70 for a little bag. (But not too little. 4 servings.) They were notably not contaminated with junk, only whole dehydrated ingredients. One was quinoa with Shiitake mushrooms and hazelnuts. Ingr: Tricolor quinoa, carrots, hazelnuts, leek, shiitake, chives, and kale. This one cooks for 15mins. The other was a risotto with shiitake and porcini. Ingr: Rice, red onion, shiitake, porcini, pumpkin, garlic, and basil. (Hmm, I may be wrong about the rice in the risotto being dehydrated though everything else is -- because the instructions are to cook like a normal risotto and for 25 mins.) Big Lots had some other dehydrated meals, maybe it was chili or stew? -- looked like they were catering for backpackers somehow but I was surprised that they had some healthier food sections along with the junk. The others though were too pricey for my budget. $5US. I didn't trust the serving size on the pkg and the meals were not self-contained -- required a lot of additions. I may take another look at them.
@RWind I originally got the idea from an IKEA side dish that they served in the cafeteria, and had packets for sale in the food section. I bought a couple to try, and decided to purchase a case on the next trip a few months later. The product was discontinued. When I look for comparable products I find mostly rice based ingredients Thanks for sharing your Big Lots find. I looked up the brand online and again found several rice based dishes, and as you say, kind of pricy. I haven’t done the math, but I’m sure I could make a 4-person serving for under a dollar. Now that holiday cooking is behind us, I’ll start playing around with seasonings again. I am in love with the idea of including dehydrated mushrooms . . .
The Instant Pot cookbook “Fast and Slow” by Christopher Kimball addresses the popped bean issue. Instead of soaking, do a 5 minute pre-cook adding 1/2 tsp baking soda with 2tsp salt to 1 lb of beans. Quick release and rinse. Continue cooking according to the beans you are using. Get the book it is really delicious! Thank you for your very helpful videos!
I have an amusing story to tell on myself...I've been buying dried beans for about 6 mos for food prepping & and have amassed 15# of 4 kinds...I had a brainstorm to do them all at once...I had never used dried beans b4...😬😳😁...My eyes popped when the lids of soaking beans began to rise...& rise...& rise...by morning, panic set in, but determined to win, I used all my large pots & managed to cook all the next day...As a pot of beans finished, I froze or refrigerated beans until each batch dehydrated...2 days later...SUCCESS!!!...They are all vacuum sealed in qt & pint jars...It'll be a while b4 I'm up to making some as meals in jars!😂😘
Well, I'm late to the party as usual. I found your channel this evening while searching for videos about dehydrating eggs. So far I've only managed to watch 3 videos and I can see from your long list of videos that I have a lot of catching up to do. I've also subscribed. I love how informative and in-depth your videos are, that is rare to find in you tube land. Oh, and if you see this, next time you lose your voice and have any kind of respiratory ailment, make yourself a cup of tea (it will likely take several) and add an eighth of a teaspoon of powdered cayenne pepper to it. Drink it while it's till hot to get the most good from it. (If you like spicy stuff you can increase the amount of pepper you use) Thanks for all the knowledge!
I love the butter and Pace Picante Sauce cooked in beans. Best refried beans that I ever ate. Works on canned beans (takes a while to cook the butter and Pace to refried bean consistency) and refried beans cook fairly quickly
I have done this with lentils. Yes, they "popped" but what a tasty snack. I never thought to try this with other beans. I'm going to go right now into the kitchen and soak the garbanzos I have. I was going to can them, but this looks better. Always looking for healthy snacks. Thanks!
Thank you, I will start some beans for dehydrating tonight. I cook one cup beans every week in fall/winter but buy hummus in summer. This will get me out of buying hummus
I saw "fast beans" and thought it was just pressure cooker beans. But, curiosity got the best of me and am I glad I watched! Now I not only know how to make "instant beans" but based on the video and comments, I know how to make flour from almost anything for my bread. Thanks so much and hope you're better real soon.
I discovered fast beans a few years ago when i started dehydrating. My daughter bought me a book of recripes for backpackers, and fast beans was one of the things i tried out.
This sounds like a great idea to take it one step further.
I'm interested in dehydrated cooked chickpeas for quick hummus. Do you have any tips?
Bean flour! what a great and healthy idea!
Very nice idea too!
At 71 I'm just beginning the food preservation journey. Thank you for sharing your knowledge and videos.
Please let us know if it works
@@kathysullivan7623 OK. Will do. It’ll be a few weeks as I’m finishing up a huge landscaping project. I’ll try to Tag you.
Great ideas--thanks for sharing.
Bonnie if I vacuum seal dehydrated beans will they be shelf stable? I want to save my ball jars!
Thank you
Great points! Thanks for sharing.
Good idea on water. I’m lucky I live on a lake and have a Berky.
How do you store these? In a vacuum sealed jar? Do you use an oxygen absorber or moisture absorber. Trying to learn and prepare at the same time. Thank you.
You work so hard for us, Pam! I appreciate what you do so much. ❤️
@@tinyacres2827 You had me at cayenne. If anything can improve chick peas, that would be it. Thanks, Tiny! ~ Lisa
Loved this conversation between the two of you!
@@tinyacres2827 I’m not a fan either , but I hear they are good for you. What temperature did you roast for,
@@jujubee7351 knowing me, it was probably 350.
Awesome. Have you ever done refried beans in their cooked form with seasonings and dried as a paste?
Thank you so much for sharing your experiences--good information.
I have heard to soak the beans to remove certain toxic chemicals?
@@jerialice Only kidney beans. Thanks; I meant to mention that. I have done pintos, lentils, chickpeas, white beans, (Navy and Grt.Northern) with no ill affects.
I found that some sprouters, soak, sprout, cook and dehydrate beans to increase the nutritional value. Bless you.
I have my dog in mind for dehydrating vegetables and grains.
I always treat my dog/cat with vegetables and fruit. I was pleased when the dog/cat sat patiently waiting for their beans.
I love how you and Jim work so close together bringing us fabulous ways to preserve
Thank you. We have fun together!
This is coming at a good time for me. I’m dehydrating a lot of veggies for a variety of soups. I can’t wait for your Tuscan soup recipe in a jar. I like the idea of having beans ready to go in a grid down situation and it will use less water this way.
Yes, less water and less fuel in a grid down situation. Thanks.
@@RoseRedHomestead I am very concerned about grid down. I live directly in hurricane pathway, right by the Atlantic Ocean (10 miles). We get a lot of very heavy tropical storms.
Smart right?
So glad to hear you’re on the mend. I have been making fast beans/bean powder for many years. I also make fast rice. Instead of buying instant rice I buy bagged white rice and cook then dehydrate.
Good to know! Thanks for sharing.
Thank you so much for sharing that. So glad you are making all that progress!

Thank you.
Being from Southwest Louisiana, I always cook my beans down to a soupy consistency. Thanks for this great video.

Can’t wait for your dehydrated bean recipes. I have lots of dehydrated navy, small red, small pink beans and also lentils dehydrated and have been looking for recipes.
That sounds wonderful. I am working on several recipes right now and will start that series of videos in the spring.
Oh yes! Lentils too! I loooove homemade lentil soup!
Glad you are feeling better and on the road to recovery 😀. Excellent video, I must admit I've never heard of fast beans until now, poor Jim must have been salivating looking at those lovely re-fried beans. Looking forward to the soup video

I’ve really enjoyed freeze drying cooked dried beans to use in instant soup recipes! Sooo convenient at prep time.
Good to know. Thanks.

Thank you so much.
I've done this about a dozen times and they turn out great every time👍
I'm looking forward to experiment with refried beans from dehydrated beans I usually make a big batch and freeze it in smaller portions but it would be nice to have a quick way to make smaller portions that I don't have to remember to thaw before I can use it.
I was thinking about cooking them in a wonderbag, it saves lots of fuel to cook them. Great that you did this already. I will give it a go.
Thanks for sharing your way of slow cooking. That is also one method I am going to show on our upcoming video on off grid slow cookers.
Glad to know this works. I've been meaning to give it a try. Thanks for posting.

I store them in jars and then vacuum seal that jars. I am guessing the self life would be at least 5 years or so. Serving sizes will vary according to who is going to eat them! With a little experimenting, you can figure out the right amount for the number of people who will be eating.

1 1/2 cups chickpeas or white beans
1/8 tsp salt
2 tsp pure vanilla extract
up to 1/4 cup milk of choice, only if needed
Sweetener of choice I use pure maple syrup
2-3 tbsp oats, flaxmeal, cocoa or raw cacao, pumpkin pie spices or almond flour as desired. dehydrate on fruit leather trays. I have also added at times cooked pumpkin or sweet potato, cinnamon etc.

Beans with juice
Flour and cornmeal ( I like more cornmeal for crispness.)
Salt and pepper
Chopped onion and or peppers. ( optional).

The dough should be like cornbread batter consistency.
Spoon into a skillet with hot oil or grease for fritters.
Brown well on both sides. Enjoy

Great ideas! Thanks so much for sharing.
What spices do you add with the white beans to make hummus?
@@laprealhayes8765 I do the original hummus recipe, which would be garlic, tahini, lemon juice, the white beans are just subbed for the chickpeas. But what I usually do with the white beans are garlic and cumin, adding in fresh chopped onion for texture. If you need to thin it, you can add mayo, sour cream or yogurt. This is really good drizzled over a taco salad, so think thinning it a bit. Or just layered in a refried bean dip. hth

After I watched this video I tried making fast beans in the freeze dryer to see if they popped like yours did.

@@RoseRedHomestead That is a relief to find out, in a way, at least you know I'm not making it up. 😉 I'm somewhat at times a bit afraid to share this remedy as well as others. Some of the "looks and responses" I have gotten.............you wouldn't believe. 😁 My favorite one (not) so far was:
"I don't delve into the realm of black magic, but thanks anyway!"
Needless to say, I just left it alone. It was how to make sassafras tea, from the root of which you can dig yourself, as most people are aware. So I didn't bother to go any deeper into an explanation, it would have only lead to the same dead end we were already at, I felt. 🙂

Nice! Love that idea and thanks for sharing. It took 10 hours to dehydrate the beans. It took only 4 minutes to rehydrate them.
I’ve made some of these using canned beans. Seems to work out well.
And I don’t have to cook them first 😊
How do,you drain them? Thank you!
@@jerialice
I just poured them into a strainer, rinsed them off and spread them out on the dehydrator trays.
You are an excellent teacher. Thank you.
You can also do the same with rice and pasta. Pre-cook, dry and store. When rehydrating you only need to pour boiling water over and let it sit until ready.
Nice to know. Thanks.
Hi there:) Sandy here from my Bumpy Ground Homestead in Michigan. Been watching and loving ur Homestead videos since 2020. I put a TV up in my kitchen so I can watch/listen to my Utube videos. I took a few pictures of this video on my kitchen TV and wanted u to see.. u... in my kitchen but I can't figure out how to post my pictures here.. either way, keep up all ur hard work. I sure do appreciate learning from u:) hugs
Thank you for all your wonderful videos! I was wondering if freeze dried beans would be a good choice for your soups in a jar or for making fast beans? Thanks!
I love this video. I am going to start this process today with some of my medium storage beans. So excited to make some dry goods soup jars!
I’m going to try this with whole grains (spelt, wheat, barley, rye) and have “instant” whole grain pilafs and salads. I love to eat them, but am too impatient to make them often because of the long cooking times.
That sounds great! Thanks for sharing.
I've wanted to try this -- will you come back and tell us how it went, please?
(Hmm, I may be wrong about the rice in the risotto being dehydrated though everything else is -- because the instructions are to cook like a normal risotto and for 25 mins.)
Big Lots had some other dehydrated meals, maybe it was chili or stew?
I am in love with the idea of including dehydrated mushrooms . . .
Thank you ma’am! I now have the instapot and dehydrator. Living and learning. I love having it for mushrooms and those things instead of throwing away
Have you tried this process yourself?
@@kathysullivan7623 yes.
This is a great idea. I have been canning beans, but they are too soft when done correctly.
I will definitely try this!
Oh yes, my dehydrated beans are a life saver when they want chili and I haven't cooked beans...
I cook them through before dehydrating them.
Good to know. I am also working on a chili recipe. Thanks.
Sounds like a great experience. Let us know how it goes when you do that. Jim
Look up fermented garlic in honey, take a tiny pc every day and your voice will stay healthy all winter! ❤️
Thanks for the tip!
Good presentation, every time. Thx.
Thank you, you gave us a wealth of info today.
I love the butter and Pace Picante Sauce cooked in beans. Best refried beans that I ever ate. Works on canned beans (takes a while to cook the butter and Pace to refried bean consistency) and refried beans cook fairly quickly
Sounds fabulous! Thanks for sharing.
I have done this with lentils. Yes, they "popped" but what a tasty snack. I never thought to try this with other beans. I'm going to go right now into the kitchen and soak the garbanzos I have. I was going to can them, but this looks better. Always looking for healthy snacks. Thanks!
ef: Let us know your final results. Jim
Charlie: Thank you for watching our video. Pam is doing much better and her voice is almost back to normal. Jim
Prayers for your continued health and healing. ❤ Thank you for sharing.
Just Patty: Thanks, Pam is doing much better today. Her voice is close to normal. Jim
I discovered fast beans a few years ago when i started dehydrating. My daughter bought me a book of recripes for backpackers, and fast beans was one of the things i tried out.
