As someone who recently went vegetarian, I was most surprised by how little I miss meat. Not to mention how amazing meat free recipes can be by not revolving around only one aspect (meat).
I've been vegetarian since I was 12 or sm and totally agreed I think that a lot of meals when forced to be made vegetarian (which literally anything can) it also forces you to understand seasonings and flavor palette and actually make stuff that you like instead of making stuff that's bearable
So I was vegetarian age 3-11 (no one else in my family was) and then switched to pescatarian 11-21 (current day). Honestly it’s not so much the taste of meat that is a no for me it’s the *texture!* I tried a few times over the years but I never could get over that part. I think everyone should eat what they want but personally I just don’t miss meat much in my diet.
