-We normally don't use honey, actually we DON'T USE HONEY AT ALL!
-Make sure to use crushed/minced ginger.
-Don't turn off the heat immediately after the tea rises up, let it boil on low heat for sometime.
-You can add cardamom, black pepper, cloves even cinnamon and many other spices as well for more amazing flavour. (All of this is optional and based on preference)
Also, the chef's tea looked awful, no Indian would ever approve that.
And its not chai tea, its just either chai or tea.

This is absolutely treat to watch them eating with their hands and enjoying it.
A very simple recipe for two people
* 1 Cup Water
* 1/2 Cinnamon Stick
* 2 Cloves ( Optional )
* Ginger 1/2 ( Optional )
* 6 Table Spoon Chai Tea ( Preferable Yellow Lable )
* Milk as much as you need
Preparation: Start with 1 cup of Water, 6 Table Spoon of Chai Tea and add 1/2 Cinnamon Stick for taste. Let is Boil first. Once its boiling add the Milk. This step is important once its start boiling again with Milk added you have to let it boild for at least for a minute on a very low Flame. This will bring out the real taste. Proceed to use a strainer and Pour it HOT. Enjoy and remember not to let it cooldown you can have small sips and enjoy. Good remedy for Headaches and Tiredness

If you want good tea, don't switch it off as soon as it rises. Keep it on low and let the tea stay on heat for a while... That's where the taste of tea lies. On that note Selena's tea looks like actual tea than padma's (hers looks horrendous)

Hot tea is just one of the cause. For other part of your comment many ingredients like clove, ginger, Elaichi, tea leaves are actually healthy for our body and even helps in fight cancer.

Selena's chai tea color is perfect. I believe she used typical fermented tea granules which is used in typical Indian day to day life while Padma used Oolong tea leaves which is almost outof reach for most common people.
Oolong tea doesn't give the typical chai color. But, it's famous for its flavor and Aroma especially when plucked in right season in Assam. Padma Lakshmi andher daughter know their chai very well.

tip: dont turn the flame off just after the first boil, let 3-4 boils come and then turn the flame off. as an indian who makes chai literally everyday for my parents, i can assure that will add onto the pleasure!

If someone is literally Chai'holic, they need to boil it atleast 10 times or put it on High to medium flame for 8-10 minutes. Then only the "chai ki talab" can be fulfilled.

I just wanna clear one thing, chai is actually hindi for "tea". So not all chai has spices and everything in it, it usually just has milk, sugar, tea leaves and water. The chai with spicee is called "Masala chai".

I have been eating with my hands for my entire life and never has anyone responded to that with 'WoW'
1. Cut up ginger
2. Grind it
3. Put it in your boiling water
3. Add sugar
4. Add tea leaves
5. Add cardamom(optional)
6. Add milk
7. Let it boil, when it comes up put the heat on low and let it boil for 2 3 minutes.

In North India, and specifically in The Panjaab, we make chai using loose black tea, whole green cardamoms (hari elaichi), whole cloves (laung), cinnamon bark (dalchini), with jaggery (gorh) for the sweetner. We would never use powders for our spice in tea, nor would we use honey. To make it a masala chai, we would add fennel seeds (saunf) and carom seeds (ajwain). We also cook our tea out, which can be anywhere from 30 mins to a couple of hours. The longer you cook it gives you a more deeper and concentrated flavour. That's the secret of a good tea. Many tea stalls will start cooking tea around 4am, and it will be ready for the commuters around 7am.
And in North Indian cuisine, we do not eat with our hands, that's a very South Indian thing. Not that the recipe was regionally specified, but just pointing it out that not everyone in India eats with their hands.
Dear Host though we add ginger in our tea , we also add basil leaves, and 3/ 4 PCs of cardamoms depends on the how Many cups of tea we r making but we don't add honey ...but yes there r different styles of making tea across India which varities from states to states and frm cities also...
