    I’m starting a little Deli in Colorado and we make our own bread! Due to no supplier for mountain town and the only option is sysco frozen stuff and it sucks… cheers for the videos!!!

    Hi. Thanks for the nice videos. But in the Part 1 at time 6:04 it says lower temperatures cause more fruity flavors and higher temperatures more sour notes. But in this video at time 3:46 it says the opposite. I am wondering which one is correct. I think this video is the correct one, but wanted to be sure. Thanks again for your videos.

      I am so sorry. That was a complete disaster mistake . Warmer is the dairy, fruity notes. This video is correct.

      I had every intention to get this going a year or so ago but then .... It just slipped my mind as I went on to other things.
      I have two new videos coming close to back to back so I will get these out very soon. After that I have written a reminder to set up my top picks Playlist as I have found some channels doing some really good videos and I have collected many.       Hi Sylvia. Got another video on base ingredients coming in the next day òr so but shortly after I am doing one on some of my favorite video demonstrations. I will release this one within a few days of my next video.

    My wife and I grew up liking the extra -sour S.F. style sourdough, such as Boudin's Bakery, or Semifreddi's. What are the secrets to getting this extra sour taste, while not overproofing the loaf. Thanks!
