I love that you gave a suggestion on what to replace the white rice wine with, sometimes us muslims want to follow recipes like this but when they use wine or alcohol we don't really know what to replace it with so we avoid the entire recipe altogether
Late comment, but may still be useful: Usually, the cooking wine is used as liquid filler and to make it a bit more potent. Potency is optional, and the liquid part can just be replaced with water. If there's no additional sugar already in the recipe, you can add a bit since some cooking wines are a bit sweet (usually rice wines like sake and mirin)

There are a lot of European dishes which use red/white wine as a large part of the dish for flavoring, and in those dishes it's not super optional. But there are plenty of delicious non-wine pasta dishes anyway so not a huge deal.

Hihi. Hope you’ll enjoy the process of cooking Chinese food at home. For this recipe, it’s enough to serve up to 3 people if you’re having it with rice. Normally in a Chinese meal, other than a meat dish, we will have another vegetable dish and perhaps a tofu / egg dish or soup. If this is the only one you intend to have with rice, then you can just follow the recipe exactly. It’ll fill two of you up nicely.

Thanks again Raymond. Just did this for my family, properly. Everything easy, except the beansprouts! To prepare them properly took nearly one hour? Maybe poor quality, standard from supermarket, but I got there. Don't forget the gin and beer along the way though! Trimmed, cleaned and drained. Massive difference when added to noodles. And Arsenal winning! Clean. Sauce was so easy too. What a chow mein. Will never buy blue dragon/amoy mix again. Plus that chicken dish, rice and some stir fry vegetables. We all loved it.

You can use mushroom sauce - similar to oyster sauce. Hope this helps.
