Leslie, I always had squash throughout my garden all throughout the summer and early fall. I make a zucchini, squash relish…
You can pickle it up and add anything leftover from your garden. I always canned it up for my winter cooking. It’s fantastic with pork roasts, chops, chicken. My family loves it.

I used to grate the extra zucchini and summer squash and freeze in 2 cup potions to be used in cakes, breads, cookies, and sauces during winter.
The catch-all zucchini casserole looked so yummy! If you throw things together that taste good on their own, the outcome is usually good, IMO.
I’ve never seen zucchini canned, so that is a good idea to pass along to my gardening daughter!

So glad your squash casserole turned out good. We grew up eating squash and onions cooked in bacon grease in a frying pan or breaded fried squash. I have never found a squash casserole I liked until I tried Fallons over at Moss family TV. I love her casserole!! Have a good night selling chickens!! ❤

Squash and zucchini are delicious grilled. Slice lengthwise, quarter of an inch thick. Drizzle of olive oil with salt & pepper. Delicious! Also saute with a can of diced tomatoes, Italian seasoning, a little salt and pepper. Good stuff! 😊

Haven't you heard, why people lock their car doors during Sunday morning services! Because when they return to their vehicles they will be full of zucchini. Haha. We enjoy the zucchini, so I would be fine with it!

✍Hi Leslie...As I suggested before, probably some of your parishioners would greatly appreciate some of those Zucchini or even your local food bank or soup kitchen. I've donated vegetables before to the Salvation Army for them to feed people in need and I'm sure you as a preachers wife wouldn't mind donating some of that zucchini and or other vegetables.

I put zucchini in sausage meatballs. Freeze them, great for sweet and sour with rice.
Miss Leslie, zucchini and yellow squash are wonderful dehydrated when added to soups, stews and rehydrated in casseroles.
Here is a simple Zucchini Peach Jam recipe - it's delicious and uses a reasonable amount of zucchini! It freezes beautifully. If too thick when thawed, just add a TB of hot water to loosen.
Stir together 6 c shredded zucchini and 6 c sugar. Boil gently 15 mins. Add 3/4c crushed pineapple with juice and 1/2 c lemon juice. Return to a boil uncovered for 6 mins. stirring occasionally. Take off heat and stir in 2 - 3oz peach jelly powder. Skim off any foam. Makes 8 - 1/2 pints

@@ruthwarren8685 I am from Canada but most likely you have generic jelly powders available as well as Jell-O. As far as I know Jell-O no longer makes this flavor. If you cannot find peach, I think lemon jelly powder would also be fine. I hope you can find the peach jelly powder though as it is so pretty with the flecks of green from the zucchini. I make this jam every year and it's delicious. I do not own canning materials so that is why I freeze it.
Whenever I shredded zucchini and froze it it turned very liquidy. But I still used it for my bread.
That's a lot of squash and zucchini. We love zucchini bread, zucchini/ squash fritters, fried zucchini/ squash, and etc.
Hi to Leslie usually when I used to make squash I would just boiled and water salt pepper little butter maybe on it that's a good idea that you can make a cholesterol out of it with the cheeses casserole not cholesterol leave it to me I always make a mistakes talking to the microphone I never can anything in my life it looks very interesting to do though but I don't think it would be worth it for just myself you have a great day now and take care

My daughter and I love zucchini and tomatoes together. We are lucky to find it in the store, but if you canned your own I'm sure it would be better. We put it over noodles or put it in soup. Also I love raw yellow squash in a fresh salad
Leslie, your hair color is so beautiful with your eyes! I just love your videos. This was fun watching you can. My mother made a zucchini casserole when I was in middle school. I've never been able to find the recipe. It was zucchini layered with tomatoes. It had cheese and bread crumb topping. Every time I've tried it gets too mushy and I don't know how to make it differently. Does anyone have any suggestions? God bless

Leslie you had a prosperous day with your casserole for supper and getting some canning done. I have a recipe that you can use a box of stove top stuffing with zucchini for a casserole. It is really good and I'm not really a squash fan but I love zucchini bread...Mrs.Steve

Zucchini choc bread is so good, and is handy to have in the freezer.
I love making fried smoked sausage, zucchini and squash. Sometimes I add mushrooms and onions if I have them.
You can always give it away.
If we lived close I would buy some of your zucchini! I love it fried and shredd it to freeze for bread.
Squash...Yum! I have a great recipe for orange yellow squash bread. This bread is so moist and so pretty I like to gift it to people. Mix all ingredients together, put into sprayed loaf pan and bake at 350 for 50-60 minutes. Cool on a wire rack. You can either sprinkle sugar over the top before baking or make a simple glaze or dust with powdered sugar.
1 large egg
1 cup sugar
1/4 cup vegetable oil 1/4 cup softened butter
1 tsp. vanilla (yes you can add more...Lol!)
zest and juice of 1 large orange
1 1/4 cup all-purpose flour
1/4 tsp. kosher salt
1 tsp. cinnamon 1 tsp. nutmeg
1/2 tsp. baking soda 1 tsp. baking powder
1 cup grated yellow squash
sounds delicious

I'm with you about turning AC on when there are windows and fans around, although when it's up to 90 degrees F., I break down and turn on the AC. Up here, we're trapped all winter with closed windows, not happy to keep them closed all summer too!
Make zucchini bread loaves nd freeze some to have this winter. It's delish. I'm sure you can find a recipe online. It's delish and is similar to banana bread.
I froze some of my zucchini and then made zucchini relish. It’s like sweet pickle relish or chow chow. I don’t believe I have ever seen or heard of a squash casserole with sausage🤷♀️

I love the way your canning the zucchini! 😍 I’m going to do that with some of this wonderful zucchini I was gifted. I plan to use it primarily for zucchini bread so I’m thinking I can process the zucchini to the point of putting it in the jars and stop right there and put it in the freeze dryer. Then I can throw it in the bread batter. Oh my gosh I can do zucchini bread in a jar and have everything in the jar except oil and water! 😮 I’m excited!

Low carb lasagna. Slice the zucchini for noodles.
Shred it and freeze it.

Zucchini bread is great….one recipe will make three small loaves….you can give to seniors, and it freezes well. Yellow squash is great not only fried but you can make squash casserole, squash Pattie’s are great….cook and mash, add egg, flour and onion and make potato Pattie’s….also you can home can yellow squash and use for casserole, Pattie’s or squash pies which are made like a custard….actually you cannot tell the difference between custard or squash custard…all of these are good to fix in the winter when it’s cold.

That is good! Seems like you use less oil too, like when you use applesauce in place of oil. It’s been so long though I can’t remember for sure.
Make zucchini pickels. Make same as you would if you used cucumbers.
shred your zucchini or yellow squash then do it exactly like you would if making chow chow or relish....it is great on beans on hot dogs on hamburgers...or just on your tongue lol

I shred my zucchini and squash to make mostly bread and cakes. I put it in freezer bags, using the amounts the recipe requires. That way it’s already measured out for whichever bread or cake I’m making. Easy Peesy. I’ve never ever Caned zucchini or squash. Why g through all that work when you can bag it and freeze it??

Grate it and bag in portions for Zucchini bread. No difference in green or yellow
ZUCCHINI "APPLE" PIE..... 4 C. slices zucchini cooked until tender crisp drain well. (Use big zucchini tender but can pierce skin easily. Peel and cut in quarters lengthwise. Remove seeds and slice crosswise).... 2 Tbsp. lemon juice, dash salt, 1 1/4 C. sugar, 1 1/2 tsp. cinnamon, 1 1/2 tsp. cream tarter, dash nutmeg, 3 Tbsp flour. Toss zucchini, lemon juice and salt. Mix in bowl: sugar, cinnamon, cream tarter, nutmeg & flour. Add zucchini to mix. Will be runny but that's ok. Put into 9 inch deep dish pie shell and dot with butter. Add top crust and bake @ 400 degrees for 40 min.
You'll have to try to believe it!
You could put a small table near the roadside with your harvest and sign "help yourself." Lot's of people need help with hunger these days.
Do you ever steam can? That's the only way I have canned.
You could bring some to church and let people take them. I always have too much so I give them away..
