  • We love fried squash more than any other way, so here is a great way to have shelf-stable squash that doesn't get mushy. If you are going to make creamed squash or squash casserole, you can still can your squash the old fashioned way. I still do that, too! Y'all go try some!

    Great video. Love your voice or accent. I saw a video of a man doing this same thing. Is this enough vinegar to preserve it? I thought squash had to be water bath for hours.

      Haha! I get that a lot. My mouse voice couple with my southern accent. 🤦🏻‍♀️
      I got this recipe from a tried and true site that I trust. Multiple people have had great success with it. 🙂

    I have always heard you have to pressure canned squash/zucchini Bc of the low acidity?? Is that why you use vinegar? I am not very confident with my pressure canner yet so I was looking for an alternative. TFS!

      That is correct. You must increase the acidity with vinegar, lemon juice or citric acid. Vinegar works great in this one!

    Since this is water bathed VS pressure canned, does it last just a few months? Most people just need it to last over the winter, so this might be an easier & more efficient method.

    I usually roast my squash, would this canning recipe be good for roasting too? I have an abundance of squash coming from my garden right now, so would love to can a bunch up for later!

    Is it possible to electric pressure can the squash recipe and still get squash that is firm enough to fry when jar is opened? If this is pressure can able, how long should I process?

      I haven't tried it, but I really think pressure canning would cook them to mush. 😔 Let me know if you try it!

      8 cups water, 1/2 apple cider vinegar, 1 tsp canning salt

    Love the video.. im confused.....im kinda new to canning... (But was raised around it) i didn't think you could water bath squash or zucchini.. soooo i want to try this... I guess my fear is botulism!?? Dont laugh... im also gonna dehydrate some. But... This looks amazing ... And i think im shocked at the cook time and the low amount of salt and vinegar... can we add more to be safer ?? Have you had any issues ever with this recipe? Im biting my nails here but.... I wanna preserve all my squash..i have alot .. ❤ great work..u make things simple!!?! Im just a worrier ...haha

      I hear ya! I am using a tried recipe and have never had a problem with it. We're still here! LOL
