  • 团圆饭少不了的客家美食梅菜扣肉,好吃又下饭
    梅菜扣肉 - Braised Pork with Preserved Vegetables
    分量 ( 可做三碗) (to make three bowls )
    材料 A: (汆烫) Ingredients A:
    1.8kg 五花肉 - 1.8kg Pork Belly
    1 根葱 - 1 green onion
    3~4片 姜片 - 3~4 slices ginger
    1 汤匙 花雕酒 - 1 tbsp Huadiao wine
    汆烫大概12分钟 - blanched for about 12 minutes
    五花肉浸泡一个小时 ,过后拿来油炸,
    材料 B: Ingredients B:
    少许油 - dash of Oil
    三汤匙 蒜米 - 3 tbsp garlic
    15克 姜末 - 15g minced ginger
    两汤匙 小葱头 - 2 tbsp shallot
    15粒冰糖 - 15 rock sugar
    300克 咸梅菜 - 300g Salted Vegetable
    400克 甜梅菜 - 400g sweeted Preserved
    两汤匙 蚝油 - 2 tbsp oyster sauce
    1 汤匙 酱油 - 1 tbsp soy sauce
    少许 胡椒粉 - dash of white pepper
    1茶匙 黑酱油/ 老抽 - 1 tsp black soy sauce
    1茶匙 糖 - 1 tsp sugar
    1茶匙 玉米粉(勾芡) - 1 tsp corn flour (for Thickening)
    2 汤匙 花雕酒 - 2 tbsp Huadiao wine
    材料:C 五花肉 (调味料) Ingredients :C Pork Belly (Seasoning)
    半茶匙 胡椒粉 - ½ white pepper
    三汤匙酱油 - 3 tbsp soy sauce
    一汤匙黑酱油 - 1 btsp black soy sauce
    三汤匙 蚝油 - 3tbsp oyster sauce
    1茶匙 糖 - 1 tsp sugar
    大火蒸煮2个小时 - Steam for 2 hours
    材料 D: Ingredients D:
    1茶匙 玉米粉(勾芡) - 1 tsp corn flour (for Thickening)

    Ah watching aunty liew really cheer me up. My hakka parents passed away a year ago, missed them😢. And i m hakka moi too. Watching this helps and aunty liew comments during cooking somehow made me happier ....during some sad moments of missing my parents presense during cny. Almost alone for dinner every cny now. Find myself answering aunty liew question : " liang !"

    Aunty, I live in Denmark with my little family. My father loved to make this dish when he was alive. It’s one of my favorite homemade dish. Thank you so much for making and sharing your recipe! And for making it look so easy. I cried while watching you cook as I was reminded of the best time I had with my father in the kitchen making this dish.
    I’m very inspired to make this dish for my little family for CNY since I can’t visit home during the CNY. May I kindly ask do I keep this dish in the fridge or freezer if I make extra? How long can I keep it?

      Don’t put this in freezer because braised pork suppose to melt in your mouth .. after your freeze the braised pork then thaw the pork .. can you imagine the results of the pork. So my mother keep it in the fridge and this dish usually doesn’t last long 😬

    有的人説過年不吃梅菜,因為新年怕倒霉嘛!還有還有,不吃苦瓜,矮瓜(可以吃茄子🍆),各種瓜類,因為怕瓜掉,過年不吃藥材湯,因為過年不生病,不吃藥,哈哈😄😄,有這個傳說嗎?所以聽說客家人改去吃芋頭扣肉。
