    As others have pointed out, you made a Jambalaya instead of a Gumbo. Just the dark brown roux for a proper gumbo would usually take a home cook 20-30 mins.

    Gumbo isn't a rice dish at all. It is simply served over rice. The word "gumbo" comes from an African word for okra which is used as a thickening agent, so a thickener is required whether that be okra, filé, or roux and I don't think I've ever eaten a gumbo without one.
    I like your inventiveness to substitute chorizo for the difficult-to-get andouille. I can get andouille but substitute non-pork based sausage when I eat with friends who can't have that.
    Looks like it probably tastes good, though.

    Adding rice in the pot is more jambalaya than Gumbo. No roux
    I've self hosted and cooked 12 large Gumbo parties.
    Looks tasty though.

    Hi can I please ask what you suggest I could substitute he capsicum and celery with as my family do not like them at all, cheers Mark

      They’d cook down so much you/they won’t notice they are in there.
      You could try carrot instead.

    That looks tasty but it is nothing like a gumbo.
    The basis of gumbo is the roux! You’ve omitted that entirely.
    And you don’t cook rice in the gumbo it’s served as white rice as an accompaniment.
    Please do not disrespect such an iconic dish

    not really a gumbo since you dont make the dark roux. it more like chicken and sausage jambalaya since you put the raw rice in there... so what are you making chef

    Justine needs to stop touching raw chicken and not washing her hands. She touched the raw chicken then touched the spring onion tops that she will use for garnish so he won’t cook…food poisoning alert
