AUTHENTIC GHANAIAN PALM NUT & PEANUT SOUP AKA - NKATEBE (Omotuo - rice balls, beans, & spinach)

Stand mixer rice balls video from cooking with Gifty: • EASIEST WAY TO MAKE A ...
INGREDIENTS for meat and marinade:
* 2 lbs each smoked, and fresh turkey wings (4 lbs total)
* thumb size ginger
* 1 large onion
* 1 tbsp garlic paste
* 1 habanero chili
* 1/4 tsp aniseed
* 1/4 tsp coriander seed
* 1 tsp homemade AP seasoning (substitute with chicken bouillon)
* salt to taste
* 1/4 tsp crushed black pepper
* 2 tbsp tomato paste
* 5 small bay leaves
* 1/4 cup water
** blend all of above ingredients, with exception of meat. Add blend to meat, rinse blender with 1 cup of water and add to meat. Cook meat for 15-20 minutes on medium with lid on **
Rest of soup ingredients:
* 1 cup of roasted peanuts/ 1/2 cup peanut butter
* 2 cups water (add to peanuts, tomato, & onion blend)
* 3 Roma tomatoes
* 1/2 large onion
* 1 prekese (Aidan fruit) cracked and roasted
* 2 cups palm nut cream
* 4 cups hot water (add to palm nut cream mix)
INGREDIENTS for beans:
* 1 cup black eyed beans soaked for 2 hours, rinsed
* 2 & 1/2 cups water
* 1 tbsp of meat marinade
* 2 smoked turkey pieces
* salt to taste
* pinch of crushed black pepper
INGREDIENTS for spinach:
* 6 cups of fresh spinach/ 3 cups of frozen substitute
* 2 ladles of nkatebe soup
* pinch of salt and pepper to taste
INGREDIENTS for rice balls:
* 2 cups jasmine rice
* 6 cups water
* salt to taste
** cook on low heat till tender and mushy, then mash to form balls **

OMG! Everything looks so good! Onuawaa you could have invited me. I haven’t had nkateb3 in quite a long time. You’ve switched on a light in my head😀😀. Yes the mixer omotuo is my way of live now. I actually use my hand mixer right in the pot🤣🤣🤣. Some laziness is good. Nkwan na api sei! I would just have it with very soft rice, Obuasi style😋😋😋.
