    INGREDIENTS:
    * 1/2 tbsp dry thyme
    * 1 tbsp dry rosemary
    * 2 tbsp homemade all purpose seasoning (substitute with2 chicken bouillon cube)
    * 1 tsp coriander seeds
    * 2 star anise
    * 1 & 1/2 tbsp curry powder
    * 1/2 tsp fennel seeds
    * 17 to 18 small cardamom pods (must be green and not black cardamom pods)
    * 3 large red onions
    * 1 Fresno chili ( substitute with 1 scotch bonnet chili)
    * 8 Serrano chilis (substitute with 10 pettie bell chilis, adjust amount to suit your preference)
    * 1 tbsp garlic paste
    * 1 & 1/2 cups tomato paste
    * 1/2 cup ghee
    * 6 large red bell peppers
    * 12 cups jasmine or basmati rice
    ** marinade for turkey ingredients: 1 large onion, 1 tbsp garlic paste, 1 Fresno chilis, 6 Serrano chilis, 1 large sprig or 1 tbsp of fresh thyme, 1 sprig or 6 leaves of sage, 1 sprig of fresh rosemary, 3 bay leaves, 1/2 tsp crushed black pepper, salt to taste. Substitute fresh herbs with same amount of dry herbs **
    * vegetable oil for frying turkey wings
    * salt and pepper to taste
    ** fresh vegetables for moisture in the end: 1 bell pepper, half large opinion, and 1 red bell pepper, all cut into large pieces **

      I’m from nyc but my mom is from Charleston and their cooking is very similar to Ghanaian food this dish in particular puts me in mind of my mom’s red rice dish the technique is also similar when I make jollof rice I’m often reminded of my mother and grandma’s cooking it’s really nice to know that our ancestors kept some of the dishes that they learned in their homeland I love this channel and sweet adjelty channel I feel like I’m part of their family always feeling welcome when I visit

    Woow. Thank you!! This was a rolls Royce party Jollof recipe! Thank you for those extra tips. I smiled as I saw you immersing the peppers and onions for moisture and flavour tip from Sisi Yemi. My personal tip is to pop my pot with the vegetables in the oven at this stage...Jollof in my kitchen gets an upgrade every time I cook it. Now I am contemplating a special twist for my birthday Jollof in a few weeks.👏👏👏😋😱🥂

    Oh dear... Guess what Nana Aba. I just ate the most terrible jollof rice ever at a wedding now.
