A little trick I picked up years ago with meatloaf is pack it in a loaf pan lined with plastic wrap, and then flip it over on to your baking dish it's a little extra work but has a tendency to hold together better.

I didn't see oven temp or how long to cook your😊 keto meatloaf, just about the oven thermometer. I'm sure I can Google it and figure it out. Also, is it ok to use coconut flour instead of almond flour which I'm out of. After a year of keto diet and tons of exercise going from 320 to now 165 I reversed my diabetes and I'm diabetic free. It took a year but I feel better than when I was 50. Life style changes, lots of determination and wanting to live as long as possible kept me on track.😊❤
I like to make my meatloaf in little individual loaves which gives me lots of caramelized edges. Also, using an electric knife makes it so much easier to slice.
I was starting to get tired of the regular texture of beef burgers, so adding the binders and egg and all that really improved both the texture and flavor. I might actually make this into little Salisbury steaks sometimes because they would cook faster. But yes the taste was awesome. I used the pork rind breading too. Great and and easy to prepare. Loved it.

I replaced eggs with flax eggs (1 tbs ground flax seed plus 3 tbs of water for each egg replacement but it doesn't work for a recipe requiring more than two eggs, let it sit for 15 minutes), loaf didn't fall apart - I added 1 cup of sliced mushrooms to the meat mixture
I haven't tried that. You probably could, but tomato sauce has more water content so it might not stay together as well. For the green pepper, it should be fine to add but I'd chop it very finely.
Hi Denise, The oven is 350 degrees. I prefer the thermometer for perfect doneness, but the approximate time is 30 minutes first, then add the glaze and another 25-45 minutes after. It’s a wide range because it depends on your pan and meatloaf thickness, which can vary, which is why I recommend the thermometer. :)

I disagree. A burger is just meat and seasonings, the addition of breadcrumbs (or in this case almond flour) makes a meatloaf quite different, regardless of the meat used. Feel free to use a mixture of beef and pork, or any mix of meats you like, though.
Finally! Someone who mixes the ingredients before adding the meat! I always do that, but I see that most cooking videos don’t. 😁

I like pork rinds best because I have a typical high carb recipe that uses gelatin in the mix to make it bind together. It works great.
Other binders are mincing broccoli & cauliflower instead of breadcrumbs or flour. Turns out great.

I add flax seed powder, cheese, bell pepper, onion and garlic sautéed and use ground Turkey. Oh and a tablespoon of Mayo! Trust me ❤
Adding “flax” anything would affect and diminish “testosterone” in men, if you’re cooking for women, great!! Don’t feed it to men.
Flaxseed destroys “manhood!”

I don't recommend using coconut flour, as the meatloaf will be very dry. The meatloaf can work with almond flour or crushed pork rinds.

True meatloaf uses beef, pork and veal but at a minimum should include beef and pork. Meatloaf using beef alone is just a giant hamburger 🤦♂️🤡🤣

This recipe does not have any cauliflower in it. If you're talking about serving suggestions, you can easily serve it with something else.
