This curry house style chicken rezala curry will be in my next cookbook 'The Curry Guy Bible'. This was just a practise live video in preparation for my first weekly live stream cook-along which will air tomorrow evening 11 June at 7pm. this guy is the man. I only have the red book BUT wow he is the best by FAR tried most currys from a takaway and the book beats them by far ..... great video i think the sound and video was spot on no need to change anything... even thinking about building my own tandoor.... keep up the great work dan...
Hi Curry guy I have just tried you chicken rezala and it was very nice. I have a question though, in your video you added what you call tomato puree but it looked like tomato passata, as it was quite runny, could you tell which it was. Many thanks
The curry guy is an absolute legend, I have all three blue, green and red books and there amazing, I remember the day I first made your jalfrezi and I couldn't believe how close it was to takeaways, and your naan recipe is outstanding, I will never buy naans again haha 😂, outstanding Mr Curry Guy 🙂

Hi Dan that was great if there’s one comment I’d make it’s the sound quality, although I could hear everything fine, it was a bit echoey and sound of the sizzling pans could be a bit less compared to the sound of your voice. Not sure if a lapel or clip on mic would help?

Tim, I was going to suggest the same thing. A lot of channels that have good production values (an probably bigger budgets) use lavaliere mics which are good at picking up the voice and not so much background sound.
Hi Dan.. our local curry house has lamb rezala on the menu. Would it simply mean exchanging the chicken for lamb ??.
That's all you have to do. If using lamb, you might want to add some of the meat juices from you pre-cooked lamb to the sauce as well to give it a lamb flavour.
At what point would you freeze the dishes? Just bought your book and looking forward to cooking. Thanks
Thank you very much Marjorie. Hope you enjoy the book. Freeze it before adding the cream and butter. Dairy doesn't freeze well. Then heat it up and and them before serving. :-)
Where did you get your pan from Dan? Looked like a great curry.
I picked that up at an Indian grocer nearby. You can get them at most independent Asian grocers. It was only about £10. :-)

I have your book and made the peshwari naan. It was fine but not to my taste as I like it quite sweet and coconutty. Would you be able to tell me how to adapt the recipe to my taste. Obviously I need to add more coconut but I’m not sure how this affects the quantities of the other ingredients.

Thanks for asking. I learned that recipe at a great curry house I go to all the time. You're right though. You just need to add more coconut and sugar. Then add more water until you have a good putty like dough to go in it. Sometimes I add a bit of sugar to ghee and paint that over it too at the end.. :-)
Dan Toombs Thank you. Also for your naan bread recipe is it ok if you only have semi-skimmed milk or must it be full fat?
