I'm in the middle of converting a van and I've been thinking about how much I miss my wife and what a help she would have been, but your video also made me remember that even with all that help it would have taken twice as long... ;-)
If the table length is less than the height of the rail on the wall you can flip the table upside down clamp it on the rail so it hangs down flat with the wall for transport saves taking up the overhead shelf then all you need is someway to secure it so it doesnt move when driving
