- CHICKEN SAAG - INGREDIENTS LIST:
500 G CHICKEN THIGH - CUT INTO CUBES
4 TBSP VEGETABLE OIL + 1 TBSP PURE GHEE
1 BAY LEAF (TEZ PATA) + 2 CARDAMON PODS, 1 CINNAMON STICK (CASSIA BARK)
2 ONION, 1 HEAPED TSP GINGER, 1 TBSP GARLIC
1 TSP SALT, 2 TSP CURRY POWDER, 2 TSP CORIANDER POWDER, 1 TSP CUMIN POWDER, 1/2 TSP TURMERIC POWDER + 2 TSP CHILLI POWDER
3 TOMATO (PUREED)
200 G BABY SPINACH PUREED
1 TOMATO CUT INTO 4 WEDGES
2 PINCH KASOORI METHI LEAVES
3 PINCH GARAM MASALA POWDER
SERVE WITH RICE OR NAAN/CHAPATI/ROTI & ENJOY!

I’m in the US and came across your channel in the past month or so, and have thoroughly enjoyed your work. I’ve tried finding the same aluminum cookware you use, but it’s not available in the US and to order from England has the shipping making the pans double in price. So, I’ve looked far and wide via the internet and then went to a couple restaurant supply stores in town type and bought a Vollrath 12” Aluminum WearEver Frying Pan and it has done well in cooking curry dishes. I also found and ordered a Winco Aluminum Stir Fry Pan, 11” and it has done well too. I’m sure one can cook curry dishes in anything type of cookware, but I wanted to be as close to authentic as possible. I’ve made your garlic/ginger paste and it is really good. It was portioned into ice tray molds which hold a good 2 Tbsp. Also made your tomato purée and made your base gravy just yesterday and am using some Rubbermaid 1 plus cup storage containers with 1 cup in each container. Gonna this Saag this evening for dinner. Thanks! And keep making more videos.

Thanks so much for this recipe. Best home cooked Indian I’ve ever made. I doubled everything and did 1300g of chicken thigh. Fed 7 people plus a little left over for my lunch. EVERYONE loved it and said I must make it again.

These one pot curries are amazing! Many thanks for sharing Latif, I had a dinner party last night and did the saag and pathia one pot curries, everyone said it was like a takeaway. I follow your normal recipes and they are good, but understand you have to make bulk curry gravy and tomato puree which is fine if you feed many and often. So these one pot recipes are genius!!
Spinach is classed as a super food with all its vitamins and minerals. Also makes super tasty curry dishes 😋

( I cautiously used 1/2 tsp of kashmiri red chilli powder and it was quite mild - I think I'll up it to 1 teaspoon and add a little more bite )

I have been cooking Indian food for over 40 years. My favourite is lamb sagwalla. I can just never ever get my curry to be as good as the one cooked by a restaurant.
I made the Tarka Daal last night which was amazing. I've been chasing the proper Indian style cooking at home for, literally, years and I've never been able to recreate it and I loathe using jars of sauce.
Then I found your videos a few weeks back and I've been hooked. Panch phoron and the kashmiri chilli powder have made a difference to my cooking but not only that, the awesome techniques you show us have filled me with confidence in my cooking.
Absolutely loving these one pot dishes.
Anyway, this Saag is next on my list!
