  • Spinach Chicken Curry - Delicious Palak Chicken - Murgh Saagwala
    Today I will show you how to make an easy chicken recipe with spinach. Instead of first blanching the spinach and then putting in cold water and grinding to a paste I just chopped the spinach and added it at the very end and I was amazed how delicious it was. I even added few mint leaves which brought in so much flavor to this dish. If you do not like the flavor of mint you can even add chopped coriander and that also brings in a lot flavor. The addition of sour cream is totally optional. You can even add heavy cream or plain unflavored yogurt. Please try this recipe and send me your feedback.

    Ingredient proportions for making murgh saagwala - serves 5 to 6
    * 615 gm/1.4 lb boneless skinless chicken thighs cut into chunky pieces
    * 265 gm / 9 oz spinach (only the leaves). I wash the leaves very well then stack few leaves one on top of each, roll them and then chop them to get thin slivers
    * 300 gm / 11 oz / 1 large onion
    * 30 gm / 1.1 oz/5 large garlic cloves
    * 30 gm/ 1.1 oz/ 2 & 1/2 inch length ginger
    * 1 large tomato
    * 1 green chilli (optional)
    * 6 to 7 mint leaves (optional) or coriander leaves (cilantro)
    * 1/2 teaspoon whole black peppercorns
    * 4 green cardamoms
    * 4 cloves
    * 1 dried bay leaf
    * 1 inch length cinnamon stick
    * 2 teaspoons kashmiri red chilli powder or paprika
    * 1 teaspoon turmeric powder
    * 2 teaspoons heaped ground coriander
    * 1/2 teaspoon ground cumin
    * 1 teaspoon garam masala powder
    * 1/4 th teaspoon ground nutmeg or jaifal powder
    * 2 teaspoons salt or as per taste
    * 1 teaspoon sugar
    * 2 tablespoons sour cream or heavy cream or plain unflavored yogurt or skip this step. If using yogurt please stir it very well with 2 tablespoons of water before adding.
    * 1 teaspoon butter

    Bumbi - I doubt you will read this but I hope you do. I have cooked a few of your curries now. All were good but this one was incredible. I made a couple of minor deviations. I was in a hurry to cook as time was getting on this Saturday evening and I had two hungry daughters and a tired hungry wife. I could only get bone in & skin on thighs so I took the skin off but cooked them bone in and for a little longer. Also I put a couple of small tablespoons of yogurt but I ran out as I had used the rest of the yogurt to make some flat breads (naan?) to accompany the meal. So I added a little cooking cream.
    The result was extraordinary. It was just spicy enough without being overwhelming. Very interesting slightly creamy and flavour filled sauce with he nutmeg, mint and coriander just giving you the 'high notes'.
    Both of my daughters loved it and my wife gave it a strong 9 out of 10. She started calling me the curry king even though I told her it was all Bumbi's doing.
    Thank you very much. Sending love from London.

    I just finished making this again for the third time. It’s quick and easy yet so delicious. So delicious I’m sure my husband probably will be thinking it took a lot of effort and hard work but it doesn’t that’s what I love about this beautiful dish! I have a busy evening planned later so I had to cook dinner earlier tonight and with being limited on time that’s why I chose this recipe. It’s a win win for me not having a lot of time and win for my family because they always love it. Thanks again Bumbi for sharing!

    I just finished cooking this dish. I have not served it to my family yet but I know they will LOVE it because I myself have already tasted it and it is so so GOOD!! I love the addition of the sour cream. I was a little nervous at first because I was thinking it would possibly curdle like yogurt but it didn’t. It mixed in so smoothly and gave the gravy such a rich creamy taste. The mint leaves were a first time to try for me but just using a little like you said gave it a unique taste that pleased me. I also definitely added the butter in the end because I truly believe that butter makes everything better 😊 Thanks again for sharing! Thanks to you I know again tonight I will have one happy family in my home with stomachs full of good food.

    I made this last night - it was lovely, and very easy. I deviated slightly by using 2tbsp of coconut milk instead of cream (we're quite coconutty!) It worked out perfectly, accompanied by naan and brown rice. The best part was we talked with our eldest son, who is in Japan right now, and when I told him we are having Chicken Saagwalla he laughed because he had been out to a restaurant and had the very same thing! 😁 This will be in our regular recipes from now on 😊

      You will get it at any Indian grocery store. Even mustard oil is not available at any grocery store here in the US except Indian stores. The ones sold at Indian grocery stores has “for external use” written on it. I like the Tez brand.

    I tried it and liked it, but it was too watery, so next time I'm going to leave out the hot water and just throw in the cream or yoghurt straight away.

      Add very less water to start with.

      Yes, a little bit would be okay. That always happens when you try something for the first time: you have to learn how much of everything you need.

    Is it my imagination or in the video is there chopped ginger mixed in within the chopped onions?

    • @CurriesWithBumbi
      @CurriesWithBumbi  2 года назад +1

      I blended ginger and garlic separately and then added it after the onions softened down.

      @@CurriesWithBumbi It was obviously my imagination, as in the video as you added the onions, as well as the white onions I thought I also saw the yellow of small pieces of chopped ginger. Just made this and had it for an early dinner, was absolutely gorgeous. I'm a fan of your idea of adding sour cream when using tomatoes in a sauce. One of my favourite recipes is your creamy tomato chicken curry.
