- Hi everyone! I asked what veggies you want to eat more of and a big one was eggplant! So, we are making vegan eggplant parm.

1/2 cup (120ml) nondairy milk
2 tablespoons (16g) cornstarch
1 1/2 cups (169g) tomato sauce

Eggplant and mushrooms are two items where when they are done well, I love them. But when they are done poorly, blech. This looks amazing!
Yes I really don’t like mushrooms I am not sure I can convince myself to like those but I can be a bit more open to eggplant now 😂 but I do agree it’s truly about the way it’s prepared!
@@PlantifullyBased I've had so many bad to medicore mushrooms in my life. I will never again eat another portobello mushroom cap as a "burger" 😳 too squishy.

Would your mozzarella recipe go well with this or do you prefer the shredded mozzarella plus non-dairy milk mix?
You definitely can use it! It just comes down to what you have time for and what you feel like doing but it would be great here!
I made this tonight! My wife loved it though she told me she's not a panko fan. I told her we can use regular breadcrumbs next time. I was lazy with the cheese and used mozzarella shreds from Good Plant Foods. I've just found them in the market and their cheddar cheese slices are fantastic. The mozzarella shreds were also great. Thanks for the wonderful recipe!

Ooooh i have to beg to differ on that but it’s always fair to give everything a chance prepared a few ways. There are just some foods we don’t like and that’s okay!

I swear we are sisters 😂 I don’t like eggplant or MUSHROOMS either! I get so much sh*t for being an Italian and an eggplant hater! They both have mushy, slimy texture, I can’t🤢🤣
Hahaha it’s okay we are Italian and aren’t eggplant lovers my whole fam 😂 it definitely is the texture. This did change my mind a little though but yeah i don’t think i can ever like mushrooms hahaha!
