Michael Weldon’s Grilled Broccolini Egg Salad

Ingredients
2 bunches Coles Australian Broccolini Family Pack
Olive oil, for drizzling
Sea salt, to taste
4 soft-boiled free-range eggs*, quartered
½ punnet chives, finely chopped
½ punnet dill, finely chopped
Finely grated parmesan, to serve
Yoghurt ranch dressing
2 cups (560g) natural yoghurt
1 tsp onion powder
1 tsp garlic powder
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
½ punnet dill, finely chopped
Method
Heat a barbecue grill or chargrill on high. Drizzle the broccolini with a little oil. Season to taste. Place on the grill and cook, turning, for 6-8 minutes, or until lightly charred and just tender.
Meanwhile, to make the yoghurt ranch dressing, combine the yoghurt, onion powder, garlic powder, vinegar, mustard and dill in a medium bowl. Season to taste.
Spread half the dressing over the base of a large serving platter. Top with the broccolini and egg. Spoon over the remaining dressing and sprinkle with chives and dill. Scatter with parmesan to serve.
*This recipe uses raw egg. We recommend that pregnant women, young children, the elderly and people with compromised immune systems do not consume raw egg. Hard-boiled eggs can be used, as preferred.
