Michael Weldon's Carisma Potato, Roasted Red Capsicum, Fennel and Smoked Paprika Salad

    Roasted red capsicum, fennel and smoked paprika potato salad
    Ingredients:
    2 kg bag Carisma potatoes, cut in quarters
    Pinch of salt and black pepper
    1 head of fennel, shaved and tops saved
    1 red onion, sliced thinly
    2 tbs olive oil, plus extra to serve
    2 spring onions, sliced thinly
    1 x 280 g jar Coles Chargrilled Peppers, drained, sliced thinly
    1 x 110 g jar Coles Baby Capers, drained
    1 tbsp smoked paprika
    2 tbsp sherry vinegar
    ½ bunch flat-leaf parsley, chopped
    Method:
    Add the potato chunks to a pot of cold water with a good pinch of salt. Place on a high heat and bring to the boil. Simmer until the potatoes are tender. Drain and allow to steam for 5 minutes.
    In a frying pan sauté the red onion in some olive oil with a pinch of salt until caramelized.
    Whilst the potatoes are still hot place them in a large bowl and add in the remaining ingredients, plus the caramelized onion. Mix together. It’s very important to dress the potatoes while still hot. Taste and add salt, pepper and a drizzle of olive oil to your liking.
    Serve in a sharing bowl or platter with extra red capsicum and fennel tops as garnish.
