If he saw the gun was about to be fired, he could duck, dip, and jive like an ethic person to defend himself in such a scenario, hypothetically. For the sake of argument, Sam could see the bullet coming by looking slightly into the future, so if you were to flinch and created a schrodinger's cat scenario with a bullet, Sam would have no choice but to grab your gun, flip it around, and shoot you in a self-defense manner. If you look him in the eyes, that's grounds enough for Sam to feel in danger of his personal safety and need to take immediate action.
