Storing Garlic

My garlic has been hanging in the out building for a while now, and I thought I’d better get it in storage. I like to freeze the cloves and use them throughout the year. Garlic is easy to use after freezing: just thaw and remove the skin, and then use as normal.
We had a lot of soaking rains this year, and I lost a lot of garlic to rot. If you remember that post, I had to harvest early in hopes to have some garlic to store.
Although the size of the garlic is smaller because of early harvesting, the flavor will probably be the same. The house was filled with the scent after processing it for the freezer.
