Brook because when he was still not dead and a member of the Rumbar Pirates, Kong was very active as a marine and so very known by the public, so it's likely that the Rumbar Pirates had heard stories about Kong. And Jinbe because Kong was the fleet admiral during the days of Fisher Tiger and then years later Jinbe became a warlord technically working under Kong's direct command. Maybe Robin knows about him too

Luffy, Zorro, Chopper and Usopp would not know. I even think he will not play any major role and will stay a background character.

Breaks my heart knowing how much appreciation of the source material there clearly is, only for it to be hindered by Netflix. I have no doubt they did their best given their limitations, I just wish it could have been better adapted, story wise.

It seems odd to me that such a presumably still powerful individual in the segments solely dedicated to politics didn’t get any time to shine there. Realistically I also find it weird we never get a scene between him and Sakazuki as I imagine they’d definitely clash on how things are handled. I wouldn’t say he’s necessarily a failure in world building but I would say he’s certainly had chances of showing up organically that weren’t taken. Personally I hope that there is a plan for the character since conceptually Kong is really interesting. He even could give us some insight into the days of characters like Kureha or Brook’s first life.

I don’t think it’s that surprising. There’s a lot of moving parts to the story and sometimes Oda just moves on. Similar to how in Egghead it’s surrounded by a ton of Vice Admirals. And despite the series already having a bunch of already established vice admirals, Oda decided that almost all of the ones at Egghead are new characters

If Kong is supposed to draw inspiration from Sun Wukong, I feel that it is only fitting that he has climbed the ranks of the Marines, defeated countless pirates, and is now living amongst the World Nobles, which loosely mirrors the Monkey King’s efforts to achieve godhood.
It is interesting to think about the world pre-Roger. We know piracy kind of existed but it feels like a lot of places were either directly changed by the influx of pirates or became reliant on pirates for their economy.
it's why I think a prequel would be a good medium to showcase the old era: the everyday-lives and adventures of all the veteran Marines/Pirates in their prime. This is the kind of material that would take more than a flashback to cover. Oden's own flashback, which was 15 chapters long, (the longest to date) could only cover so much of his life, or else it would've been twice as long. With a prequel series, there might be very little to skip: the whole plot might be a long, straight-forward story covering everything relevant from the Void century, Rocks' era, Roger's era, etc. would give Oda a wider margin to explore more
So what do we think was Kong's codename? I've long thought Sengoku’s admiral codename was White Goat or Shiroyagi. If you look at the jacket cuffs of all the admirals, they have cuffs the same color as the color in their codename. Aokiji’s cuffs were blue, Akainu’s cuffs were red, Kizaru’s cuffs were yellow, etc. When he is promoted to fleet admiral, Sakazuki is still seen wearing the coat with the red cuffs. This establishes that an admiral doesn’t necessarily get a new coat when promoted. Sengoku wears a coat with white cuffs, not the maroon that lower-ranked officers wear. He also has that pet goat.
Maybe Kong was the person with a code name with Monkey in it before Kizaru was promoted to Admiral much later? It would fit with the King Kong and Dragon Ball references. Probably a different color for the first half of the name though. Or it could be something Turtle (Kame) if you go further with the DB reference, too.

The WG probably takes the fruits of deceased Admirals, and uses them on a rotation basis.

Kong is a weird anomaly among characters in One Piece. Not only was he a former Fleet Admiral, he's now the Commander-in-Chief of the World Government's entire military. Not to mention he's bound to be powerful, since he used to be a Fleet Admiral, who is at least an equal to the Admirals (plus those massive muscly arms have to mean something). And yet, for the vast majority of the story he's done next to nothing in the actual story, which honestly kind of makes sense; if the Fleet Admiral is basically tied to a desk to the point where they can't actually do any field work, that must also apply for the Commander-in-Chief. Still, it must be pretty easy for people to forget he's even there for the most part, which is a shame, I'd honestly like to know more about him (and how his forearms are somehow bigger than his head).

My head canon is that the monkey family line is supposed to serve in the marines in some capacity as some sort of 800 year long punishment / settlement with the celestial dragons for losing in the war. All members of the family line are genetically superior to average people and clearly lineage factor / family plays a big role in one piece.

You missed an important thing here. 6:06, He is mentioning that they led during Garp and Rogers time, because it is something that admirals do on the feild. Fleet Admirals DO NOT leave the office. Hence what happened when sengoku was on the fleet admiral position and currently with Akainu. The fleet admiral stays at the main base. In this case Marineford. It's not because they were LEAGUES above him or anything like that, just that they were the ones actively on the field literally leading the navy when they were away from base.

10:28 tbf, most of the Original 7 Warlords were loyal. Only Hancock and Doflamingo were actively disloyal. Moria technically didn't break any laws in the eyes of the World Government - he confronted criminals like Brook, Lola, and the Strawhats. Moria lost his position as a Warlord not due to breaking the law, but due to being a failure. Jinbe didn't disobey the World Government until they went after his friend Ace and hero of the merfolk Whitebeard. Aside from refusing to kill Zoro at Baratie and Luffy at Marineford, Mihawk was very loyal. Even Crocodile - in hindsight, wasn't disloyal when he attacked Alabasta - they're an enemy nation of the WG. The only illegal thing he did was running Baroque Works; the WG doesn't approve of organized bounty hunting - likely because it directly competes with the Marines.

You missed an important thing here. 6:06, He is mentioning that they led during Garp and Rogers time, because it is something that admirals do on the feild. Fleet Admirals DO NOT leave the office. Hence what happened when sengoku was on the fleet admiral position and currently with Akainu. The fleet admiral stays at the main base. In this case Marineford. It's not because they were LEAGUES above him or anything like that, just that they were the ones actively on the field literally leading the navy when they were away from base.

Can't really use the generational gap to determine age since we don't know when or why he was promoted and when Sengoku took the position. As you pretty much stated with Smoker age doesn't always reflect rank so he could be closer in age to Garp and Sengoku.
Exactly this, kizaru was the oldest admiral at the start of the series and is still a admiral while Akainu who is a few years younger is still 6 years older than kuzan who was also in the running for the fleet admiral position
