Home Basement Bar [Trader Vic's Rum Keg]

  • My friends Justin and Mo Bird have an absolutely incredible home tiki bar in their basement. I was out in Nashville for some photography business and while there, we decided to shoot an episode! This is a big tangy cocktail.
    To make the the drink in the video:
    --------------------------------------
    4 oz fresh squeezed lemon juice
    2 oz fresh pineapple juice
    1 oz apricot liqueur
    1 oz rock candy syrup
    1 oz passion fruit syrup
    5 oz light Puerto Rican rum
    1 oz dark Jamaican rum
    8 oz crushed ice
    --------------------------------------
    Blend on high for 20 seconds. Pour unstrained into a ceramic rum keg.
    Add ice cubes.
    Serves 4.

    Awesome! So great to see my friends the Birds. I am so lucky to have been able to hang out at the Omni with Justin and Mo before it closed. My first Tiki event was the Hukilau in 2009 and that's the first time I met the Birds. Lots of good times since.

    I've got a tiki bar in my backyard and sadly have exposed electrical wires on all of my lighting. I don't know how many times I get done watching one of these episodes and immediately spend $$$ buying upgrades. Today that upgrade is something called "lamp wire"...Thanks Spike!

    Awesome episode!!! I love hearing about their 1st experiences and how they got into Tiki. Plus how sincere they were. I think everyone feels the same way when they first immerse themselves into a any type of scene.

    A- Super fun episode, as usual! B- Maybe there's a chance to do a Breezeway Tour of Home Tiki Bars? C- Try the recipe with the rock candy syrup, you'll probably see how much better it tamps down the acidity of the lemon.

    Fun times!
    Trader Vic's Rum Keg is one of my favorites, but it's finicky to get right.
    (1) Trader Vic's, at the restaurant, does not blend Rum Kegs to slushies, despite what this recipe says (probably via BBB?) -- it is flash blended in batches with crushed ice. This is how their books and their current recipes instruct the mixing process.
    (2) I cut the Lemon by 1/3, because it can be too lemony, if going with this 1950s version.
    (3) While I love Hamilton rum, Trader Vic's Dark rum doesn't have as much Jamaican funk. In my opinion, using either Trader Vic's Dark Rum or a similar dark rum, such as Blackwell, is better for this drink. It has an almost "marshmallowy" flavor to me.
    (4) Don Q is a good choice here. I also will use Plantation 3 Stars for some extra character.
    (5) Oddly, in this drink, it benefits from using canned Dole pineapple rather than fresh pineapple. Fresh can sometimes be too mild, and in this cocktail, it can get lost.
    (6) The current TV recipe is better balanced: 6 oz Light Rum, 6 oz Dark Rum, 2 oz Apricot Brandy, 2 oz Passion Fruit Syrup, 2 oz rich simple syrup, 6 oz Pineapple juice, 6 oz lemon juice.
    For me at least, this is how I make it in order to taste just like TV's serves!

    It's sad that Tiki Cat closed - I couldn't make it there in time. I know it was mentioned in the episode, but if you get a chance, you MUST go to Max's South Seas Hideaway in Grand Rapids. I had the pleasure of visiting a few weeks ago and was amazed!

    Mo & Justin, our local airport has a direct hopper flight to Nashville now! Would love to pop in for a weekend and meet up at Choppers or Pearl Diver to enjoy some cocktails.

    I have the Opal 2.0 (GE direct or William Sonoma for the new one, Amazon only has the previous generation). I love the thing, and have nugget ice in all my cold drinks now. However if you want to be a bit budget conscious there are a few other models out there. The thing that most people don't like is that ALL these machines are louder than traditional ice makers. So don't put it in heavily trafficked rooms and know what noise level to expect.

    Love Justin and Mo!! Such fun people Spike, and what a great home bar. And I actually have a serious question for you. Do you know where the whole shared tiki drink mug originated from? It's always fascinated me.

      Oh wow.... interesting question! I always thought that maybe it came from an interpretation of a Kava ceremony or something... but I'm just guessing.

    Another awesome show (and drink)! Question: you’re a stickler for following recipes, but sometimes you use Bacardi 8 when a recipe calls for light rum. Is B8 considered light in some circles, or is it just a preference thing?

      I think I was told that it was a light rum back then... I've since realized that that was horribly wrong. 😣🤷🏻‍♂️

    Pub Tiki Philadelphia back in the late '60s and early '70s when I was 6
    was the most exotic incredible place, fire, pu-pu platters setting the drinks and food on fire and the lighting was so beautiful. I fell in love with Tiki. Do you have any info on Pub Tiki?
