In SMT games, you're supposed to tell the demons what you believe they want to hear. Many of the options are outright lies (at least from the main character's perspective). In SMT5 for example, you have the option of saying "I'm actually a girl" in one negotiation, even though it's established that the main character is male.

Okay so the fascinating thing about this is that since I got this game on the Switch, I've been recording the negotiations I do to help my sibling out with the P5R guidebook they're making (long story). And the thing is, according to the tutorial, shadows prefer different kinds of answers depending on their personality. There's four kinds of answers - serious, jokey, vague and kind. Gloomy shadows like vague, dislike serious or jokey, and are neutral to kind answers. Liked is the music notes, disliked is the anger symbols, and neutral is the sweat drops. So according to this, "I like men" is a KIND answer, which I find fascinating, because that could mean a ton of different things for Joker's personality. The real question though is if "I like older women" is serious or jokey, I guess...
I think the “I like men” comment is ‘kind’ as a way of letting the shadow down easy. Like, “I’m not interested in girl talk, but it’s not because of you, it’s me.”

Honestly any ship with Akechi is completely disfunctional. He's a psychopath who killed dozens, some of them relatives to the Phantom Thieves, and a romantic relationship is probably the last thing he has an interest in. Though he's pretty hot, as a bi guy.
