funny, I am going to make sooberag in a couple days. I make it with clarified butter which takes the sooberag to a whole different tasty level and I use olive oil, never refined oils such as wesson which is so bad for us. I use mozzarella cheese. I love muenster cheese, but, never thought to use it as a substitute cheese. My mother use to use mozzarella and monterey jack cheese which I found to be too heavy. I roll the dough out about 18" dia and layer as shown here, but, when done, cut the uncooked soobereg into squares before baking. other than the fact it is labor intensive but ah so good.
