Turkish traditional cheese and leek water pastry detailed recipe
The amount of pastry to be made will be 2 trays, enough for 24 people
1300 grams of sieved white wheat flour
    14 eggs will be enough
    250 grams of warm water
    40 grams of salt
    deep saucepan for kneading dough
350 grams of butter and 250 grams of liquid sunflower oil
classic cheese and chopped parsley for burrito
    leek
salted and powdered carbonated boiling water
    half pots cold water
add the eggs into the pots
it would be good to have the eggs at room temperature
    add warm water
    add salt
    mix eggs, salt and water
    sift and add wheat flour
    knead the dough until smooth
dough can be very hard in this case you can add some eggs
2 extra eggs written to material list
a sticky and slightly hard dough was obtained
needs to be divided into a total of 16 pieces
1 tray of water dumpling requires 8 pieces of dough
Prepare the dough in a round shape and cover it in an airtight manner
soak the dough for 1 hour in a warm environment
    melt the butter and oil
it only suffices to melt fluently
Add flour to dough and open with thin rolling pin
you can leave the dough aside after folding
opening of all doughs is complete
add liquid sunflower oil to the tray
Add 1 dough to the bottom of the tray
other pulps need to boil in boiling water
Prepare the ingredients to be added until the water boils
    pre-prepared and frozen leek
    leek preparation stage
peel and wash the outer skin of the leek
    finely chop the leeks
Cook the leeks with olive oil for 10 minutes
    add chili peppers
    add black pepper
    add salt
Insert into wide tray to cool
can be stored in the freezer after cooling
cut and use the amount you will use
    prepare white cheese
    parsley chop
    mix the parsley and cheese
cheese can be dispersed in this way because it is pre-frozen
add plenty of salt to boiling water
    add carbonate
salt and carbonate required to avoid dispersal of dough
add the dough into boiling water
After 15-20 seconds, remove the dough without water and add to cold water.
    cool and remove the dough
add oil to each layer of pastry
    add the boiled doughs
    add oil
    add leek
You can make it more different way, mincer, potato, spinach can be used
    add cheese
Boil the dough and prepare the third layer
add oil and add another layer of leek and cheese
Boil the doughs and prepare the final layer
    add oil
add dry raw dough to the top
close the edges and add oil
    now the cooking stage
cook pastries on the stove over low heat
Do not bake because it causes to dry
cook for 10 minutes by turning at intervals on the lowest level of fire
Prepare and lubricate the same size tray to turn the pie
    carefully turn the tray
fritters a little too fried, reduce the duration to 10 minutes to 9 minutes
The other side fry will last shorter, 6 minutes is enough
leave for 15 minutes after cooking, and slice, ready to be served
this recipe resulted in the first attempt
cooking stage can be a bit distressed, the fire was a little too much, in this case may be a little too fried
I'm sure it will be more professional in the second attempt, thanks for watching
cut and served in this way
you can try the cheese one is nice, but for me, the one with the vegetable is more beautiful, you can try
a cold juice can be preferred next to the hot pastry #waterpastry #TurkishWaterborek #suborek

Elinize sağlık güzel görünüyor hafif fazla pişmesi dışında. Plastik süzgeci özellikle mi kullandınız? Büyük olarak elinizde o mu vardı? Isıya dayanıklımıdır emin değilim.

USTA, thank you so much for this notice about karbonat. P.S. You are the only one, who I saw ever and who uses a sieve (as me too) for to take the dough out from the boiling water.

Interesting and complex process. But I bet it would taste a lot like lokshn (noodle) kugel which is way more simple to prepare. That is an Ashkenazi dish. There are many different varieties of kugels and also potato kugel. Some kugels are sweet, some are savoury.

Do you boil the sheets because they are cooked on stove and not in the oven?

    • @ChefSalimRecipes
      @ChefSalimRecipes  2 года назад

This is how water pastry is made, it should be juicy, it will be dry in the oven, so it will be cooked over the fire and it will not be dry inside.

so that the dough does not come apart and you cannot do this with every flour, it must be firm flour like pizza flour

Correct. You can add 1/2 cup of milk to the butter and oil it keeps the middle moist
