    Very nice! In Tuscany they're called gnudi.
    I like your idea of using the ice cream scoop, very clever!
    Try adding some fresh sage to the butter, it works well with this dish. Ciao!

    My grandma passed down this exact recipe we would make every winter but after boiling she put them in a baking dish with butter and parmesan and baked them in the oven. Not sure where she got the recipe since she wasn't Italian but I can confirm they're delicious!

    I personally use a wok and a bamboo steamer, because why have two steamers from two different traditions when one can steam effectively with just one?

    These look delicious and healthy! 😍 Sometimes I see "salata" (sheep's milk ricotta) in the store, which seems very dry already. Do you know if salata would also work in this recipe?

      Ricotta salata is a grating cheese, so it couldn’t be used to make malfatti. The ricotta, cow’s milk or sheep’s milk, has to be fresh. 🌹

    Trying these tomorrow! Can you use a tomato sauce for the base instead of butter? Also, are you using the ricotta in the "tin" that drains? They look delicious!

      Malfatti are very delicate, and the tomato sauce, delicious as it is, would overpower them. But, if you want to try them with tomato sauce go right ahead!

      Yes, these are the same as Gnudi. If you serve them in broth they are a delicious soup; they are great either way!
