I realize that this is a bit off topic, but I noticed that you have some mantids, and I am thinking about getting a Malaysian Shield Mantis. Could you tell me how often I should feed it?

Depends on the food type, size of food and size of the mantis. Depending on the size of the mantis you should try to offer it some food daily or every other day. If it stops eating for 2 days it’s about to molt so clear the cage of food. If it’s a more harmless insect like a cricket then that’s where you can leave it in the tank.
