Diples are a fancy deep fried pastry that are light and tender, drenched in a honey syrup and dressed with cinnamon and walnuts. Makes for a very showy topper to a cookie platter.

Wow, what can I say? Your skills with making the pastry and cooking the Diples is excellent. Well done, your mum must have been so proud of you. I really appreciate that you are making all these recipes and showing us these techniques. What a brilliant resource your YT channel is for people like me. Hi Jimmy... oh wow!! Thank you for the very kind comments. And thank you for bringing back memories of mom... And as you said, that is one of the reason for the channel... to pay tribute to mom, for one, and to help spread the great recipes and techniques in Greek food. I did not see much cooking in my mom's style when I went looking for Greek recipes, so I decided I would share the best versions of most things I had had... and it was also to be a reference for my family who wanted to recreate their 'Thea Maria's' recipes...
