  • This is a classic of Greek cuisine. A rich and creamy custard filling made with semolina and flavoured with orange zest and vanilla layered between deliciously golden and buttery phyllo pastry and then drenched with a sweet syrup. Doesn't get much better than this.

Yum! And how wonderful that you are sharing these memories of your mother. Thank you for such clear instructions (futziness appreciated, haha). Also, when your dog came into the room, I had to double-check that it wasn't MY little dog wanting to go outside, lol. Looking forward to checking out more of your videos. :-)

Hello John. I live in Ilford. You're a lucky guy to have your mum and she cooks such good things. My grandmother was my influence. She cooked all the village foods and I do my best to cook Greek food. My son loves koupepia especially. All the best!

@@jimmydemetriou7847 Hi again... yes, I was blessed with a wonderful mother in all respects but someone with a definite talent for the art of cooking... spurred on by marrying a very picky and discerning pallet in my father... hahahaha... the two of them are responsible, I am sure, for mom's accomplishments in the kitchen. I am very happy to have learned at her knee and for the fact that she let a boy help in the kitchen etc. I am also very fortunate that I thought to write these recipes down before her dementia got too bad and she couldn't remember how anymore...I feel I have about 90% of her repertoire, and I hope to put as much of these on this channel in memory of her and a contribution to our collective information on this here worldwide web.
I had to look up koupepia, as I had never heard the term before.... from the quick search, I assume that is the Cypriot name for what are called dolmades elsewhere in Greece, correct? That is one recipe mom never made, as far as I recall... I know how to make them from my restaurant days, but not from mom. I'd love to read your recipe someday... (grin)... hint, hint, nudge, nudge. 😜🤣

@@jimmydemetriou7847 Hi Jimmy, I suppose I am very lucky, my mum loves to cook, so lots of treats for me. I have lots of relatives close by who also like cooking Greek food and we have amazing Greek restaurants here in North London too. Your son has good taste, I love koupepia to with yogurt :)

One of my all-time favourites. I used to walk to school and I would buy a piece for breakfast. The one at the bakers was a singular wrapped parcel. Well done and thank you. X

Sounds like a great memory!! Thanks for the kind words... and I hope you try this... I am sure you will not be disappointed and as you can see, it is not really all that difficult to have a huge lovely pan of galaktobouriko on your counter.... hahahaha... I apologize now for what may happen to your waist-line.. :)

Anyway, please continue to make your wonderful videos, as you really have a nice way of doing them. X

@@MomsGreekKitchen I remember an aunt of mine used to bring home a sweet. It was a kind of toffee but tastes of coffee. I don't know if it was a Greek sweet and if I was just assuming so. Do you know anything about it?

@@jimmydemetriou7847 sorry Jimmy, it doesn't ring a bell... I mean, candy making wasn't one of mom's accomplishments... and I don't know any Greek home cooks who make anything like toffee, either. But then again, I'm not Greek-born so my experience of everything Greek is limited to what was available/common where I lived and the few visits to Greece I have made...
