When you're taking notes you usually do a draft first? And organize later on your sketchbook? Because my first notes come out a mess everytime, and sometimes I have so many notes to reorganize that I end up typing and printing.

(not sure if VtV himself will answer at this point lol so) I know he drafts the ones for his videos bc he mentions it in other videos - he shows some of his rough drafts which kind of lay out the spatial arrangement and there were a few where he was sketching out how to represent a particular idea.
I've had a similar problem where I read part of a book for school, pull out all the facts I want, and then stare at the facts and the notebook trying to figure out where everything should go and how to represent it all at once... and usually it still turns out messy. I'm experimenting with pausing every couple paragraphs to scribble down a representation of just that topic, and then by the time I get to the notebook I just have to refine and connect the individual doodles. It's maybe more time consuming, but less stressful/would produce a more organized result if your notes usually turn out messy.

This is helpful. I have a question: while sketchnoting, do you suggest using two different colors simultaneously or can that be done at a later stage?

This is so darn obvious that i can't believe i've missed to see it on all my past notes! I absolutely liked this video not only will it help me re-do, my old Skecht notes (wich always left me with sense of unsatisfactio for their messiness), but more importantly it will help me organize muy future notes thnks a lot!
