It was the only food I recognized when Modesta, the owners niece offered it, and better than him being hungry. When she brought it to our little table I was delighted and said, "This is like an omelette!" And so delicious! Especially with espresso! Later she graciously taught me how to make it, plate flip and all. As well as other wonderful and kind Spanish ladies that taught me other dishes but she was the first. I miss Spain, her people, all the flavors they gave to my senses and carry them all in my heart. Hope your viewers make the tortilla. It is much more than just eggs and potatoes and it must be cooked with olive oil! Any other oil will make it far less tasty. Thank you for sharing foods of Spain!

This is perfect road food. My mom always made a _tortilla de papas_ when we went to the drive-in or Disneyland. It's tasty, filling, super easy to make, and keeps well for an outing.
My mum taught me this as a youngster (one of the first dishes i ever made by myself), she used to add thyme and cheese and never flipped it but finished it under a low to medium grill...beautiful 👏

As soon as I saw this recipe I subscribed .My mother was from the village of Morón De La Frontera, she would make it for us and cut it into pie wedges and wrap them individually so we could take them to eat on the train. She would also put sliced black olives and a little chopped parsley. It's great as a meal or even just a little snack and keeps well.
I didn't make this because I am staying away from potatoes for awhile. But I used this method and made it with shallots, olives, red bell pepper, garlic, spinach and ham. Delicious. I was nervous about the flip but following your directions it worked fine. Love this method. My husband and I are going soon on a fairly long plane ride so I figure I could make a couple of Spanish omelets, cut them into wedges, and we will have something to eat on our journey other than junk food. Would love to visit Spain).Though grandma did learn how to make the flour tortillas, a tortilla was a different thing to a Spaniard. Back in the 80s I lived in Spain for four years. This was my absolute favorite thing to eat. But I never made it. Now I can. Going to make it this weekend for my grandkids. Will leave out the peppers though. They won’t touch it if they see those. I honestly don’t remember peppers in it either. Anyway….thanks.
I lived 10 years in Spain, tortil la de papas is made differently, sliced potatos are cooked with onion in large amount of oil witch then is drained off, potatos back to pan with garlic, eggs are added, when loose on sides plate goes on top and its flipped over to cook the other side.
You have the only channel I watch that stops my wife as she walks through the room. Usually she is on a wine refill mission while her romance shows are paused in the other room. She loved this episode, and so did I. There was a run on potatoes here recently, but I will scout out some markets further from the beaches, where our population is highest.
Usually garlic, and chillies are the first thing we add in heated oil. But you added the garlic at the end. Would have to try it this way. Looks delicious !!
