I just made this for breakfast and it was amazing. I didn't have the machego but used monterey jack instead but I think it's the olive oil and potatoes that really make the flavor. Lovely, lovely tortilla, with all that beautiful spinach! Thanks❣️ Spinach is just soooo yummy! I just dehydrated two large bags of frozen spinach and powderized them, so I can keep adding spinach to my food on impulse. I always have several veggie powders on hand, as it is such a quick and easy way to eat lots of veggies, even if you don’t really feel like it. Sometimes I just add them to my food as if they were spices, soooo yummy! My favorites are mushrooms, spinach, carrots and leeks. Thanks for the inspiration to veganize tortillas! Hmmmm... Maybe tortillas could be something for you & Chef Jana to collaborate on? Hmmm... I had a delicious tortilla at a restaurant here in my Norwegian home town, before I went plant based (more or less vegan). It was a standard potato tortilla with onions, but it also had pieces of chorizo added. It was sooooo yummy and even cute, served in a little pot... Would have been so much fun with a vegan version, with egg substitute made from scratch (based on chickpea flour, water and maybe some pea/bean protein powder, black salt/kala namak, nootch, agar agar etc) and homemade vegan chorizo (made from a mix of vegan proteins, maybe, with «vegan fatty meat» etc and stuffed in vegan casings, just like real animal meat sausage!). A real challenge, but I know you two can handle it❗️❣️❗️ 😊 💚🌱🍀🧩✅💚

Love your recipes. I love to eat but lazy in the kitchen. Mostly because of the prep work, not cooking itself. I need to work on my knife skills. I used to go and splurge on breakfast every Sunday. That was one of the ways a treat my self. Spanish tortilla and freshly squeezed orange juice were one of them at a fancy bakery. Does tortilla is typically eaten with something else? What about a fresh salsa?

Is he using low flame or medium flame after putting mixture in the pan.. My tortilla always gets stuck at the bottom and it becomes revuelto of Eggs :(
Usually to make Spanish tortillas you only use olive oil, as it is what really flavors it, but if you don´t have any, you can use another oil :) much love
