Making Dahi without starter - Make Curd without the Jaman - Yogurt without yogurt culture

  • If we don’t have the ready made jaman (yogurt culture), we still can make dahi without any starter curd.
    Ingredients for making yogurt without starter
    Boiled milk - 1 liter
    Green chilly - 2
    Red chilly - 2
    Lemon - 1
    How to make Curd without the Jaman
    For setting the curd, take boiled milk in a vessel and place it on flame to make it lukewarm (make sure you heat the milk a little that it can be touched with hands easily). When the milk turns little warm, turn off the flame.
    We can use lemon, green chilly or red chilly powder for making the starter curd to be used for setting the curd at home.
    First method for making the starter curd (jaman):
    For preparing the starter curd with first method, drop 2 green chilies with stalk in one milk bowl( Make sure you drench the chilies well in the milk along with the stalk as only then the starter curd will set).
    Second method for making the starter curd (jaman):
    For setting the starter curd with second method, take red chilies with stalk and drench them well in the another milk bowl. Also, make sure the the stalks are nicely drenched in the milk.
    Third method for making the starter curd (jaman):
    For the third method, take one lemon, cut it into half and squeeze out the juice in a bowl. Now add almost 2 tsp lemon juice to the third milk bowl.
    Now cover and keep aside these milk for 10 to 12 hours at a warm place.
    After 12 hours, remove the lid and check the starter curds. All thee three types of jaman (yogurt culture) are ready. Now we can use them for making the curd. The taste of starter curd prepared with green chilly, red chilly or lemon is a little different then the curd prepared with these starter curd.
    How to make Dahi ?
    For setting the curd using these homemade starter curd, take boiled 1 liter milk in a vessel and place it on flame for make it lukewarm. When the milk gets lukewarm, turn off the flame and transfer the milk equally to two casseroles.
    After this, add 2 tsp starter curd prepared with chilli in one casserole and put the lid on. Keep it aside for 6 to 7 hours to set. Now in the second casserole, add 2 tsp of starter curd prepared with lemon and close with the lids. Let it set for 6 to 7 hours.
    You can also use any regular vessel as well for setting the curd but casserole is best to maintain the heat required for setting the curd. Therefore, use casserole for setting the curd quickly and easily.
    After 6 hours, remove the lids from the casserole and check the curd. Dense, creamy and rich curd is ready.

    Yogurt is made by fermenting many types of milk -- including whole, skim, and evaporated milk -- with lactic acid bacteria. These beneficial bacteria are usually from the types called lactobacillus bulgaricus and Streptococcus thermophilus. Depending on how yogurt is made, the resulting product can have different flavors and textures, and contain different strains of good bacteria.

    I used the chilli method and lemon method. I've made some amazing yogurt! It definitely does work, Thank you! For more sour yogurt add more lemon and let the curd sit longer. 🤤

    For some obvious reasons we couldn't make yogurt every time I tried. May be something to do with the store bought yogurt. Now this is so good. Thank you Nishaji. I will try this. It's very short simple specific and to the point instructions without adding any unnecessary spices and talk and talk lengthy explanations. Thank you Nishaji. I will let you know when I make it.     Hi everyone, I had read loads of blog about how to make curd without starter, they all varied a little. I tried all, but every time I ended up throwing them. Nishaji also did the same thing but she explained everything pretty elaborately. At least I could understand :). I finally made the curd today after watching her video. This time I did not waste anything.
    Finally I could make my own curd in a foreign soil :D.
    I assure you this video is authentic even if you are not in India or tropical part. Just keep it in oven, if the weather is cold.

      Swati Sahoo: in west lactobacillus capsules can also help ... not sure, never tried ... these capsules have live lactobacillus spores and they are sold as supplements as probiotic ... actually nishaji is wrong in saying that it is enzymes which make starter ...it could be that lactobacillus spores are on skin of chilies and lime or they have substances which will preferentially help lactobacillus from environment to multiply faster ... it is like kanji making ... in kanji making salt discourages other germs from multiplying and either mustard supplies fermenting starter germs or they too help salt discouraging bad germs from growing

    Just taking notes..
    Boil milk
    It should be lukewarm
    Pour in cups
    Submerge Two Green chillies or red chillies with stalks or two tbsp lemon juice in the cups
    Set for ten hours
    This is starter curd
    Boil milk
    Should be lukewarm
    Transfer milk to casserole and add two tbsp of the starter curd
    Set for six hours
    Use full cream milk
    Put yogurt in fridge for better taste

    Hi mam, I tried with green chillies, but the milk remained same after 8 hrs..so I tried with lemon yesterday(for 100 ml of warm milk,I added lemon-2spoons)..the starter came out so good with lemon.. today I am making my own curd from this starter.. I don't know how to thank you.. I live in USA..we don't get good quality of curd in stores here.. I tried many times making curd using store bought ones.. every time they were coming like sticky thing which is same as lady's finger quality...by seeing that curd.. I was feeling disgusting., but know I learnt to make my own curd starter... thank u 😍😘🙏🙏🙏

    Very nice! Two questions -- a) Taste differences between the dahi made from the two types of jaman? b) anybody experimented with mixing the jaman after making it? Does one culture overpower the other? Do they degrade? Do you get a different taste?     Thanks a tonne for this detailed video.. I couldn't believe my eyes when I saw the settled curd. I tried it for the first time in my life. I have started hating the market bought curd now. It tastes really bad. Although I don't like curd but I can have the raita everyday.. & I could feel the difference in taste & texture of curd.     Mam, this is a very creative idea of yours to prepare the starter curd in this manner. I have come to know this technique now itself through your video.
