    Those steaks turned out perfect!!! I cook primarily on a kettle grill, mine is not the Webber though, I have the masterbuilt kettle that home Depot sold for many years cause I'm a cheap ass! I build the fire on one side and mix apple wood chips in with lump charcoal then put steaks in a fajita pan on the cold side then move them to the hot side. I never thought of letting them rest like y'all did. That was a great idea! Next steaks I do I'm gonna do them exactly the same way y'all did. Thanks for the good information and excellent video!!!

      Yeah, you've definitely got the fire management down. Regarding the rest, I've tried it with and without. The steak has always tended to turn out juicier with a rest. It will lose some juice when you've got it wrapped, but not as much as if you just took it right from the cool side to the hot side. Please give it a shot and let us know if you noticed a difference.
