****ANNOUNCEMENT!*** We definitely forgot the part about heating up the water/ sweetener in the microwave. Totally our fault! (We figured as much) I don't know what was going on that we were so distracted, but it happens. Love you guys!

I am literally making marshmallows for a school treat right now (GF/DF/Egg Free--they're the BOMB!) Some things from regualr marshmallows to try: 1) in regular ones, you need to heat the sugar mixture to melt the crystals, consider heating to dissolve completely! 2) Putting marshmallows in the fridge will make them absorb extra moisture and they won't be able to set up at all. Try covering with oiled plastic wrap and letting it rest on the counter for 4-6 hours to set! 3) Once you get it going, there are so many possibilites! Try Cinnamon vanilla, Maple, use coffee for the liquid, add in a tsp of cocoa powder for chocolate, a few DROPS of peppermint extract.......YUM!
PS: You do need to apply heat somewhere in the process in order to MELT the gelatin--sprinkling it on the water will BLOOM it, but you need to actually warm it to dissolve it. (imagine making jello with cold water only. No. ) Also--As I', typing this, I'm wondering if adding a bit of extra gelatin to a box of sugar free jello with the liquid requirements then whipping it will make SF marshmallows????? I'm going to try it!)
Tips: When you use gelatin you need to dissolve it into your water When you add a liquid flavoring you disrupt the liquid to dry ingredient ratio. When a recipe calls for stiff peaks it means STIFF peaks not almost, kinda close. I see that a lot of the recipes you try don't turn out because you substitute ingredients for others you don't have on hand. you were supposed to heat the simple syrup until the crystals dissolved before you add it to the gelatin mixture...that's why it didn't fluff enough and was gritty.
Almond extract is very strong so I would have only used a 1/4 tsp for that amount.. I also wonder if in addition to the powdered sweetener if you had browned the top under the broiler for a quick minute how would it be for keto s’mores…💋🧚🏻♀️❤️🇺🇸
My first guess would be the almond extract. You said that was about a teaspoon, but it looked like a lot more. Extracts have alcohol which prevents the gelatin from working properly.
Oh, I just watched the creator’s video and it looks like you forgot to make the syrup, and just added the water+sugar mix to the gelatin. It was supposed to go in the microwave until there was no undisolved sugar. Also, he mixes the whole thing until it’s super stiff.
I love how you two bicker…too funny 😂😂 I good stand mixer will work much better as it has more power, which helps create more volume. And obviously beat for less amount of time. Plus it’s soooo much easier on your arms!!! In Rahul’s recipe he had stiff peaks, which you didn’t achieve. That’s important for this recipe. The test….You turn the bowl upside down and mixture stays put. Also in Rahul’s video he warmed up his sweetener & water until quite warm. That might make a difference. You’re basically making a sugar syrup. You can even freeze the marshmallows and you could eat right from the freezer. So ya just gotta do take #2. 🥰
I think we messed up so much by not heating the liquid that we couldn’t form the peaks, we were beating it for at least 20-25 minutes before we gave up lol.
I have the same microwave and changed the way I open it (from the top) thanks to you ! I heard you say 'crunchy' and that means something didn't dissolve.
You could try beating it in a deeper bowl , (so more of the egg whites get whipped at one time), using powdered sugar, as well as beating it for longer ….until stiff peaks form. Good try though. Enjoyed the video even though the recipe didn't turn out as expected………..I just watched the creator's video and it looks like you forgot to microwave the sugar/water combo till all the sugar was melted. Thanks for putting me on to this recipe. I love marshmallows.
The only thing I think you missed was, in the original video, the guy puts the water and sweetener into the microwave for 2 mins, or until all the sweetener was dissolved. Maybe that was the issue? Still loved the video ❤
You needed to use hot water to dissolve the gelatin (and sugar) and then beat the mixture for the 12 mins :) Great effort though. Loved the video still !!
You guy bicker like two sisters. 😂 You can easily fix the mwave. On the handle, pop the top cover off, carefully. See if the screw will fir back in. If not, take it to the hardware store and get a slightly wider screw. Careful NOT to get a longer one. Voila, put cover on...

They do try to make some non-keto recipes in to keto, hence the substitutions.
But yeah, they needed to whip it more like making butter from cream.

Yes you need to boil the sugar and water 👍 I use allulose and when they’re set I cut them into squares and roll it in toasted coconut. Very yummy 👌

Just make marshmallows and use allulose for sugar and liquid allulose for corn syrup.
Much more gelatin!! I make it and keep it in the refrigerator for a week. I mix plain gelatin + 2 boxes of sugar free jello mix ( I use strawberry)
Geletin usually is desolved in warm water not cold then stir until completely devolved then add the other ing.

You ca wiz the graulated sugar and make powdered
If you want powdered sugar just grind up the regular shugar into powder with a coffee grinder
