Ingredients for cake :
3 tbsp boiling water (热水)
2 tbsp chocolate powder or cocoa powder (巧克力粉或可可粉)
4 egg yolks (蛋黄)
1 egg (全蛋)
20g caster sugar (细砂糖)
1/8 tsp salt(盐)
65g corn oil (玉米油)
45 water(水)
100g plain flour(普通面粉)
10g corn flour (玉米粉)
4 egg whites (蛋白)
1 tsp lemon juice (柠檬汁)
80g caster sugar (细砂糖)

I learn from other videos & comments, sponge cakes cannot be taken out straight after bake/steam time is up. It must be left in the oven/steaming pot for at least another 5 mins to let it "get use" of the low temperature. Try that if is useful for you
The egg whites should be of soft peaks in chiffon cakes. I tried with stiff peaks and my cake shrank

Yes u can use cake flour....in fact cake flour is recommended when making soft cakes like a chiffon cake...mixing corn flour with plain flour is just a substitute for cake flour when u dont hav it in hand

It's corn starch because it is white while the corn flour is a little yellow..

Was a bit confused when the instructions said to bake it cuz I normally use water bath for these. Anyway I baked according to instructions and rested in the oven for 15mins before taking it out. Still deflated hahaha. Taste and texture ok but it didn't come out as chiffon cake for me
