Here I am again... Am I the only one who posts here? It is now more than a year since I first commented and today I am back at canning more ugly chicken. I have seven quarts in the canner now and it isn't even 9:30 AM yet... Yes, it is true, the raw pack is a great way to can chicken. Seven quarts fit 48 chicken thighs with bone in and skin on but some of the skin and all the fat was trimmed off. I have canned a lot of chicken, beef, pork and more in this past year and a half... I have not tried any of them yet as this is all for emergency use. I also made your baked beans and they are so good I ate most of them already... well, I gave some away... Home canning makes great gifts.
Just canned ugly chicken for the first time today. My kitchen smells soo good.
Waiting for that vent to vent for 10 minutes was the longest 10 minutes of my life! LOL…. I did it!! I followed your instructions to the tea and they came out beautifully!!! Guess I don’t have to ask for private lesson!! I just wanted someone to hold my hand that’s all….Thank you Ma’am for all your instructions and video’s!!!!! You held my hand throughout my processing….🥰
What a great video! When I was a child, my Grandmother always purchased chicken canned in a glass jar at Woodward's Department store. She used it to make my delicious sandwiches for my school lunch... But, once Woodward's closed down I never saw chicken for sale in glass jars again. In fact for many years I have never seen canned chicken for sale at all... Now I am thinking of making some and just bought a small pressure canner. Canned chicken is marvellous! I am 74 years old and just getting back into canning...
If you're hungry enough you won't be worrying about it being pretty! Your eyes will find it gorgeous!
Or at least your stomach will!!!
So easy to open a jar of chicken and heat it up, thicken the broth and serve it over mashed potatoes, rice or noodles. Add a vegetable and dinner is served.
My grandkids favorite meals with canned chicken is Chicken and dumplings, chicken and egg noodle soup, bbq chicken sandwichs, chicken with gravy and dressing and chicken burritos!
I like adding herbs and a splash of cayenne pepper, chicken not so ugly😊
80 lbs of ugly chicken this yr. .40 a lb was a blessing and supplied a large part of preps.
AWESOME!
SO SO DELICIOUS!!! You are the first person who did teach me the pressure canner rules and that so gorgeous chicken!! Thanks a million times. Sorry for my English, I am a French speaking from Province of Quebec, Canada!!
You are so welcome!
Your English is very good! Good Wishes to you from the south of Florida, USA. ( Apologies for our crazy politics here...we don't understand, either!)
We finally canned our first ugly chicken this week and tried it in homemade chicken noodle soup last night. It was sooo good and super convenient! Thank you Leisa!
Awesome!!!
I just came across your videos and with all the crazy in the world now I'm going to get on the ball and buy while I can and can it up
Buy a whole pork loin and can it the same way you are doing chicken.... Complete. Game. Changer
We do 😉
I should try that soon.
I can’t WAIT to try that! GREAT idea!!
I bought two large pork roasts to make pulled pork. If I cube it and raw pack it, will it shred when you open it like the chicken and beef, or is the pork too fatty to raw pack?
my grandpa used to can it almost that exact way and i literally use a jar last year when this virus stuff started it does last almost forever
There is no such thing as ugly chicken when you are filling the pantry shelves! WooooHoooo!
Watching you can this chicken is just so wonderful. I bet your heart is so happy just listening to your accomplishment as each of the lids pop!
Found split chicken breasts for 0.88 per lb. Bought 12 for a total of 15.97. Canned 11 pint of chicken, made 11 pints of stock from the bones. It is so pretty. Also found pork tenderloin for $1.29 a pound.
When I bought the Presto Canner, my husband didn't understand the necessity of canning but a good husband respect you and he helped me. He did the same reaction of: "it's ugly do you think that you succeeded your chicken?? I am sure but I took a fork and showed him how tender the chicken was tender and make him. After that he never ask the question. My favourite is with Pineapple sauce and rie + a chicken that you an ut with the side of your fork!!! Yummmmmm!
I'd take "ugly" home canned chicken any day, over store bought.
Especially when canned chicken is so insanely expensive for a tiny can.
@@anonymouse257 Granted, you can get a massive roasted chicken for $6-$8 and shredding that and freezing lasts for ages! And the roasting adds a lot of flavor. The bones can also be used to make broth!
I hate store canned chicken
Boneless/ skinless chicken for 99 cents is unheard of where I usually buy thighs for 99 cents/lb. but they don't go on sale for that price as often as they used to.
I do the ugly chicken rather than the labor intensive chicken and it is ugly but it tastes good. Sometimes I will can my left over turkey and it looks much nicer.
Pressure canned chicken is the first food I ever canned. It is the easiest and most delicious... and the natural broth is liquid gold💛💛💛
I am scared to can meat...I can everything fruit or veg and tomato sauce but...botulism, scares me...
Flow Rinse. You can have botulism from not properly canning fruits and vegetables. Just use safe practices like you do with the other foods.
@@flowrinse9671 I saw a chef who didn't wash or change knives between cutting onion and another veggie and barely scratched her arm with the knife n got one of those infection like e-coli n lost her arm and shoulder and there was no meat involved.... Veggies can be just as dangerous.. 😣✌️
@@beckylynn209 Actually, more so because they use fertilizers that contain manure on those fruits and veggies. If the restaurant in question isn't washing their produce correctly or keeping up with protocol in contamination proceedure it is very possible to get botulism, e-coli, salmonella, etc., from produce.
Carmen Wheatley you are absolutely right and I was scared to can tomatoes but I did it right. I can do this too I just need to get my process right. I think this would be fabulous in pot pies or chicken soup! Wish me luck!
Ugly chicken is the BEST tasting!!!
I made my first batch - 8 pints - yesterday in my new Instant Pot Max. Today I made a big batch of homemade noodles. I emptied a jar of chicken, it’s broth plus some extra, a couple of sliced carrots, half of a small onion, a rib sliced celery, cooked gently until the veggies were done, then added my homemade noodles. When they were cooked, I added some frozen baby peas (they keep their color that way), and we had the best chicken noodle dinner I have ever made! I sent Hubs to my 92 year old friend’s house with a pint of this goodness so she can have some after chemo tomorrow. This is beautiful chicken that
makes a beautiful meal, and I think you are one beautiful lady to have brought it to our attention! Thank you! I am a big fan of ugly chicken and beautiful you! (Your fear is shared, BTW, as I live in a hurricane zone)
I'm 70, by watching you I did my first attempt at canned chicken successfully. Your videos are precise and to the point. Thank you.
Great job! You got this!!!
There is nothing ugly about that chicken besides it is just chicken. Canning is a great art and a calming one at that. Thanks for the lesson.
I have been watching Three Rivers Homestead lately, she cans all their foods! That lady is awesome! I believe she now has 8 children, and they help her a lot! Reminds me of back in the day when families were so close together.
I am about to do quarts of ugly chicken this morning. Ahead of Canuary 2024.
I'm so sad the chicken at Walmart cost $3 per lb now. I'll be lucky to find it for $1.99 at a store cheaper than Walmart.. Beef is so jacked up too.. I just got my first pressure canner and I'm excited to start canning! I plan to make chicken enchiladas, soups and even crack chicken with it.. I fear the cost of thanksgiving turkey will be higher too.. I wish I could turn back time to 3 years ago!!!
Look on Amazon there are several different styles of freezer locks. We lost a bunch of stuff and it made me cry years ago so now we keep that lock on every time.
I sear them before I can them. My attempt at ugly tuna, resulted in jars that needed a toothbrush to get the jar clean
The 23 quarts has a problem: it's so highly IAM obliged to climb on a step to be able to pick them up without burning my arm!! I am too short!! Lol!!
I started canning meats for the same reason that you mention. One time the electricity went out for ten days and another time the freezer gave up the ghost. fortunately, I had the canning equipment, jars and lids to do what I needed to do to rescue the food in the freezer both times!
So we can safely can thawed meats?
@@stephaniern33 I did and I never had any kind of issue. I won't argue that it is safe, even though I think it is.
What was the name brand of lids you use?
@@valliemiller2156 I use all kinds. Lately I have been using the lids from Lehman’s and the ones I got from the local Amish store. I find that the reason jars don’t seal are “pilot-error”
One year when we raised turkeys, I did the same thing with turkey meat. Delicious! Turkey and dumplings is as good as chicken and dumplings. In the fall when whole turkeys are on sale would be a great time to can turkey.
I had a freezer failure a few years ago, we lost about 300 lbs. of home-raised pork. Canned meats are wonderful and a great alternative to freezing.
I have a quite a lot of chicken. I'm looking forward to doing this.
I have frozen chicken (mostly white meat) and will have to check canning recipe for that.
UGLY? Make great casseroles or stews or even salads - oh and soup. No meat is all that pretty if you can see it in the jar.
Thank you for keeping me company while I canned ground beef today. Doing it by myself is lonely sometimes 🙂
Ahhh. I can alone too. Today while I was canning I saw a button for all her canning vids to play one after another. Yep..7 hours of Suttons Daze vids. It was great!
I made this 1 month ago. I was quite skeptical and so was my family. Well last night my little boy wanted chicken noodle soup. WOW we were blown away just how good it is.
You're officially an ugly chicken convert! Congrats!
I am addicted to canning chicken. Went on sale for a long time around here, and now I have canned chicken coming out my ears. LOL There is just something so satisfying about taking them out and watching them bubble.
Thank you for your message to me yesterday... so today I tried canning some chicken thighs... they were big thighs, and four fit perfectly into the 750 ml Bernardin jars. I left the bones in... it was so simple. I did it just the way you show here and it turned out perfect! I am getting excited about canning again... I did a lot of canning with my Dad when I was a young teenager as he had a huge organic garden and lots of fruit trees... It was one of the most fun things I did with my Dad... After about 30 years of not canning, at age 74, I am back at it...
Ok...you have convinced me...I will can ugly chicken!!!
Wonderful!!!
Thank you so much for this video, if I can find chicken on sale, I will definitely be doing this.
Along with all our other canning, we put up stuffed peppers. In a wide mouth pint a little v8 or tomato juice, then the pepper, then shove the porcupine into it and top with a bit more juice. Can like beef. Pour them in a bowl and nuke them. Awesome!
Finally got my confidence up and have my first batch of “ugly chicken” in the canner as we speak.
I've been watching all your videos in these uncertain times. And this one sold me. I had been looking to buy a chest freezer and they are so expensive and at this time hard to find. Watching your videos has convinced me to give pressure canning a try instead. I see some ugly chicken in my future :) Thank you for your videos!
I work in appliance Dept at Home Depot in NC. We are starting to get more freezers instock finally. For 1 person the 3.5 cf is great. I got one for myself with the door on the front years ago. One of the best investments I've made. It's amazing what it holds. I fit 2 small turkeys on the top shelf.
I always can ugly chicken! I make mine into tacos, pot pie, salads, burritos, soups, all kinds of things! It's a perfect meal.
Yummy! Ugly chicken Alfredo, chicken spaghetti, chicken salad, chicken with broccoli and chopped apple and dried cranberry salad, chicken noodle and dumplings. We use it any way we would using cooked chicken, but makes for super fast meal preps. Canned chicken and beef are tastier to me than fresh. I cannot substitute the taste from pressure canning! Thank you so much for sharing your canning with us. I gained confidence in my canning by watching you, and Heather! Love you both!
Thank you for this video. In the past few weeks I have found myself canning meat… Beef, pork, chicken. I will confess that I did not want to do this because it is disgusting to see it in the jar. However, I see the need to do it. Just look around. What’s going on in the world? I’m canning it, and I teased my husband and said I just hope I’ll be able to eat it. Then I said if you get hungry enough I guess you can pretty much eat anything. But thanks for addressing this because it is an issue.
I shredded/mashed a qt of ugly chicken, added an egg, fave seasoning (any mix will do), grated Parmesan, formed into balls and browned lightly on 2 sides. Sauté bell pepper, onion, add mushrooms & add to chicken. Add marinara and top with more grated parm, heat through and serve!
I've got ugly chicken, beef, pork and venison on my shelf right now lol. It can be ugly all it wants it's DELICIOUS!!!!!
1 1/4” headspace per the newer guidelines.
I don’t understand why people always say meat looks ugly when canned. We don’t normally see chicken, beef, tuna, and sardines canned in jars. The purpose is to store edible food for a long time and not to stare at it.
💯%! I don't usually stare at meat unless it's the RARE occaision that I get a steak. Then I stare at it because I want to remember it!😂
Put paper over your cutting board then your cutting board is much safer and cleaner. You'll still have to wash and disinfect it, but it'll save you time.
Go ugly early and you never have to worry 😂. All kidding aside, canning chicken has been a blessing for my diabetic dog when he has bad days with his sugar. After working a long hard day at work, I can pop open a glass jar of ugly chicken and make a quick, healthy meal for me and my dog.
I get my lids at the Dollar General. Golden Harvest brand which is also a part of the Ball family. In my area they are $1.75 a dozen. Haven't had any lid failures yet and I've been using them all summer.
Cresta King I didn’t even know they sell them. I’ll check it out. Thank you for letting us know.
You are so lucky. They cost more than 10 times that in UK
They are $3 now. How sad.
I made ugly chicken and
Oh my god it makes the best pasta dishes. We prefer it over the frozen chicken for those dishes.
I have added 1 chicken bouillon cube to my “ugly” chicken when canning quart jars
I can "ugly chicken" all the time. It's AWESOME and so flexible. Chicken salad, chicken pot pie, chicken & noodles, chicken & dumplings, chicken casseroles, chicken soft tacos, chicken enchiiladas, and on and on and on. EXCELLENT video for someone who hasn't done this before!
I love love love canning chicken breast in wide mouth jars!!!
A couple weeks ago my local Sam's Club had chicken thighs on sale for .98 cents a pound!!! I bought about 30 pounds and canned them up and put some into the freezer!
My first time on your channel and thank you for doing so I want to learn how to can... I get sciatica nerve pinched all the time that knocks me down
Leisa, I thoroughly enjoyed this tutorial. Thank you.
I like to can chicken thighs bone in, and skin on. Very cheap and great broth as a bonus. Also as an Alaskan I always have more salmon than I can fit in a freezer so I can it in the same way, minus the bones.
I love home canned salmon, wish I could get hold of some to can. Have a boat but not big enough for Lake Michigan! Lucky you!
Had keto 'ugly' chicken noodle soup last night (zucchini noodles) in 15 minutes. Hit my satisfaction button.
K Flan, you must share your method! How did the zoodles hold up in the jar? How many soups were you able to add to your inventory?
Angel Silvas I used canned chicken, canned bone broth and threw in celery and thyme and lots of black pepper. Simmered 5 minutes and added zucchini noodles and simmered 4-5 minutes. Added a good shot of real salt. It was truly a satisfying alternative. I have dehydrated noodles also and they store and cook really easily
K Flan, oh. So you didn’t add the noodles to the canning jar? CAN you add them to the canning jars as a pre made soup? And how do you prepare to dehydrate noodles? Are you talking about dehydrated zoodles or boiled pasta?
So I use squash quite a bit in soups. Especially Mexican Chicken Soup. When I canned the soup with squash they became VERY soft. So I can the soup with what holds up best texturally. So I became an 'equal opportunity food preserver'. I can, dehydrate, freeze and ferment. When I want to eat a soup which needs additional ingredients I bring to a simmer and add in more delicate veggies. Squash or cabbage for example. This week I used fresh zucchini noodles. As my squash and cabbage are producing I noodle (squash) or shred (cabbage) and dehydrate them. When I want to make soup when my garden is not producing I add dehydrated produce to my soups. They absorb the broth and flavor. They will not be the same as fresh zucchini noodles but close.
That’s awesome! Sounds like after it’s done there’s a good feeling of satisfaction in the process.
I use the amber/brown jars for meats. Nobody ever knew what the chicken looked like 😳
Brilliant!
Great idea!
I would LOVE to get my hands on some colored jars! I’ve never found one in the store or in the wild! I bet those are gorgeous!!💙
Love this idea!
@@deborah820a couple years ago I found several red, & 1 blue quart jars at a thrift store & snapped them up! Ace Hardware in my area has 2 quart/ half gallon jars in amber. They are priced out of my budget! Would be great for juices.🍀
Hi Lisa, I'm a brand new subscriber but not a new viewer. I've watched for over a year but always through Roku where I couldn't subscribe or comment, but I have certainly enjoyed following you. I've canned for over 40 years and am still going strong! You are a great teacher and thanks for your commitment to inspiring others to 'do it right'! Appreciate you - so glad to finally be able to comment!
Watched your video and canned 32 lbs. Because I found a great sale on chicken breast. I LOVE the name Ugly Chicken! Now I've canned some Ugly Pork Loin, and Ugly Beef Roast! Love my UGLY meats, delicious!
I never commented on this video but should have. I LOVE that you call it Ugly chicken. There's no better name for it. But I'm also a firm believer that Ugly Chicken is Delicious Chicken!
Thanks Linda! I LOVE ugly chicken ❤
Yes it may be ugly but you are right it is delicious!!!
Chicken breast is 3 dollars a pound now.It was on sale yesterday at 2 dollars a pound.
I bought a tee-shirt that says If fat is flavor then I must be f@@king delicious! I get a lot of compliments and laughs when I wear it! I bought it from Sam the cooking guy on you tube.
Love the convenience of my ugly chicken 😃
My mother Susan Heitz and I watch you all the time. You're an inspiration and rockin lady!! Thanks for all the teaching you do xoxo
I love my ugly chicken to make chicken dumplings 🙏❤️🇺🇸
Looks like gold to me! Love hearing that ping.
That’s right up my alley!!! I love Mexican!
I love canning chicken, makes super fast & easy meals! 🤗
Looks like an old specimen in an anatomy museum!
Thanks for the
Do Not Microwave!
Information. Will not do it again!
smiling, you could not have picked a better time to show this than now with the storm supposedly coming through in a couple of days, Thank you and God Bless you and yours please stay safe.
Ohh, Leisa! I wish I was 10 yrs. younger, if only to justify canning 'beautiful' chicken! I love the flavor that develops in the jars...one can actually see it, and especially when someone holds up a piece...mannnn.... breaks my heart! lol.
Great video! Wish this had been out a month ago. I dumpster dive and found a fantastic haul of chicken and other meats, but mostly chicken, from a local store. Saved as much as I thought I could at the time. Totally filled my 2 upright freezers. Friends and family had no room in their freezers. I was so sad to see that much food go to waste. Well, thanks to you...no more! By the way, the food was still partially frozen and/or cold to the touch.
EPIC SCORE!!!!
Yum. Dumpster chicken. Was it Sam& Ella's brand?
I feel like a broken record but when you dived for meat, was it frozen?
@@stephaniern33 Some was frozen and all was cold. If meat and dairy isn't at least cold, I won't take a chance.
@@SuttonsDaze how much water in canner doing double layer?
I hope you get this omg omg I just watched the video from a Utah University she put cold Chicken in hot jars she put two inches in the canner of water she cooked them both together as if they had the same cooking time she said to cook them for 90 minutes instead of 75 omg omg I saw him glad I found you I did my first raw pack chicken thigh thing today I think I did okay I think I put too much headspace though🤪
Nothing ugly abt those they are beautiful....thanks Leisa
I can chicken, bbq pork and roast beef, chilli, tomatoes, spaghetti sauce, salsa, pinto beans, pickles, sweet potatoes, beef stew....some foods I water bath...low acidic foods I pressure can. I can't keep enough jars lids bands etc. We love to eat what we have canned and is good to know I have things on hand in case of power outage or a snow storm etc.
Jennifer Showalter. I saw another canner that said she removes her rings after 48 hours. That way if they pop open you know it right away. If you still have the ring on it can seal back. But at that point it has gone bad.
Another great video wish Chicken was still .99 cents a pound-LOL Another reason to can yourself.
I’ve been wanting to do this, I live in central Wisconsin and in the northern part of my county the last of the prairie chickens live, back in the 40’s and 50’s my dad hunted them ,but when he’d take me grouse hunting, in that area , we’d run into wood cook stoves out in the woods and he told me that back in the depression, when he was a boy , families would head out there in the fall ,camp and hunt prairie chicken and they canned them on those wood stoves , so I guess they had ugly prairie chicken, back then my dad said there were lots of prairie chickens ,now they’re protected
They disappeared with fence row plantings
I get my Ball brand lids at Walmart for $1.92 per dozen, no shipping for regular or wide mouth, wide mouth are a little more money and buying them in the store means no shipping cost. You can order them also on Walmart.com, and if you order enough, the shipping is free. I can ugly chicken as well and use it in 8 different ways. Good video.
Glad I found your channel! I live in Central Florida on Social Security, so canning and preserving food is a must. I grow a 30 x 40 foot garden and can the produce. I make my own tomato sauce, and when I can't grow tomatoes, I'll buy 25 lbs at a time and process them. I usually buy 40 lb boxes of boneless, skinless chicken breast from a local meat packing company. It's a little more expensive, but I can fill my freezer and have plenty when chicken is sky-high. I do buy chicken on sale, too - $0.49 chicken leg quarters and $0.99 chicken breast is just too hard to pass up! Most of the time I vacu-seal and freeze meat in 1 lb packages, but if I want "pretty chicken" or other meat, this is when I hot pack it. I buy beef round and sirloin on sale and either grind it or cut it into stew meat, and I'll buy pork loin for chops, and shoulder - that I grind and make sausages. Needless to say, my freezer if FULL most of the time. Now the fun starts....We get hurricanes here. One is actually impending in a couple of days and may be a category 4 - Dorian. That usually means that we'll be without power for a few weeks after it passes. Like you, I don't have a generator, but I do have a gas stove. I can everything in my freezer as it thaws out, so that means raw packing - Ugly meat - good food! No A/C so the house it hot anyway - might just as well can!
Keep safe. I hope all goes well for you during this storm. ❤
I have been canning ‘ugly’ chicken for years and my 5 kids won’t eat chicken from a store bought can..they say it tastes like tin! And hello from West Michigan
I'm at the end of my chicken I canned right before Zaycon went under. I'm watching the sales ads here looking for a great deal, but, in the meantime, I am putting up beef and pork as we find deals on it. I love using my "ugly chicken" in lots of things, from chicken and rice to stir fries.
@Tina Sparks porksandwiches, casseroles, stir fry, with pasta and sauce...
Excellent tip on wiping the rims of jars with VINEGAR!
Ugly chicken is delicious!!
It is 2024 and I’m canning two turkeys. At .69 per pound, it’s a great deal. I’m also making stock to can. Just needed to review your directions. Thanks.
Most of all delish! Everyone who has tasted my ugly chicken loves it. I even had to teach a class to my friends on how to do it.
Love watching your channel. I used to can with my Mom when I was younger. I cannot find a pressure canner anywhere. I wanted the 23 qt Presto and the only ones I can find are on line and they want a fortune for them and I don't know some of the companies that are selling them. I hate this COVID crap.
Yay I’m canning ugly rabbit today!
You go girl!!!!!❤❤❤❤
just re-watched this for time and wanted to share I use my ugle chicken for an amazing casserole found years ago in Better Homes and Gardens called TexMex Chicken and Rice casserole. Wonderful and chicken tacos and Asian chicken salad, along with many other things. Now I am off to start my pressure canner
That is awesome!
Oh my it ugly Chicken!! I have heard so much about it. Can't wait to try it myself!!
I have this EXACT same worry! I'm all about canning because you never know when that day comes and you go to check your freezers and discover something really bad happened and I have four. Two for meat, one for eggs, produce and milk and one for finished freezer meals. It would be devastating if one or more went down.
I do canning and dehydrate to diversify.
so tonight we had my ugly chicken alfredo with broccoli! delicious! Homemade one-hour bread for 5 cheese garlic bread. yum. thanks for encouraging us. simple easy quick and again all ate up.
Thanks to you, we have lots of ugly chicken and we LOVE it! My family doesn't care if it's pretty as long as it's delicious 😆
