- We challenged chefs of three different skill levels - amateur John, home cook Lorenzo, and professional chef Chris Cheung from East Wind Snack Shop-to make us a batch of egg rolls. Once each level of chef had served up and sampled their creations, we asked expert food scientist Rose to explain the choices each chef made along the way - both good and bad. Which egg rolls would rival your favorite Chinese restaurant’s version?

Okay so is the air fryer the level 1 chef go to heater cause that seems to be the case lately and just throw everything in the air fryer while level 2 and 3 will use all these other things. But I am glad that at least level 1 didn't pull an egg roll out of a bag and heat it up and be like... this is it. He actually made it. Level 1 is actually showing skills again :D

Something I use instead of cabbage in egg rolls/potstickers is brussel sprouts.
If you fry food in oil correctly you will only soak up one tablespoon of oil when deep frying 5 pounds of potatoes. just keep the temp at 360 or above. that is a very hard thing to do though with the oil temp dropping when you put cold food into it.
