Dear Mr. Saleem, I did make my Somosas yesterday. Unfortunately, I realized that the flour I used, "cake flour" known in the West (or at least in the United States) is NOT the proper flour. It results in a porous pastry, not at all the crispiness the Somosas are known for. I have a feeling that the Italian "00" flour, that I also use to make pastries such as "Cannoli" (you can look up) is the perfect flour. I will try again, this time with meat filling using "00" flour. Also, we are not used to very hot dishes and my hands were burning from cutting the chiles which I did not use but the taste was great. Thank you for your help, I will let you know the result so you can inform others in the West or the United States that wish to make this delicious dish with your excellent videos!! Hi vrobaldo use cake wheat flour or all purpose wheat flour, this is the correct flour. Use Kitchen gloves when cutting chillies, add one chillie to your filling for a more flavourful taste. Thanks. God bless 🙏

Yes you can. Cling wrap around 30 strips at a time and freeze..when you need to use them,remove from freezer and allow it to thaw out and microwave it for 2 to 3 minutes. It will be as good as the day you made them.

Hi Saleem. This recipe is amazing but I find that my 4 cups of flour is only yielding around 17 disc's and then small rotis. Any advice for me?
I see your rotis are quite big. Mine is half of that evn though I Roll it out thin.

Why you don't add the oil in to the dough?
so when you pulll the layers apart ..it doesnt stick - all pur ( samosa dought) use this method
I tried and my strips stuck together. Can you tell me why
The following will cause your strips to stick. 1. Rolling out too tin. 2. Leaving it in the oven for too long, reduce the toasting time. 3.make sure you oil well. 4. Don't roll out rotis too small before oiling, roll out big. I hope this will help you.

6cm in width and 27cm in length.if you want smaller Samosas then reduce the size to 4cm in width and 20cm in length. Shukran
