      Ingredients for 12 pieces:
      350 grams of all-purpose flour (2 1/4 cups)
      1 teaspoon salt (5 grams)
      2 teaspoons vegetable oil (30 milliliters)
      200 milliliters boiling water (4/5 cup)

    This recipe is almost identical to how my mom used to make chapatis, an Indian variant of flatbread. She often put surplus dough in a plastic bag in a freezer, letting it thaw out on the kitchen counter When she wanted to use it. It stores for a few weeks!
    A couple of things she did different:
    - no boiling water
    - fold the rolled bread on itself once(it's still magic to me how she still managed to get a round shape from it
    - no cutting wit a template, but that's a good shortcut that I'm going to steal😂
    - when bubbles start to form, press down on them gently, so the steam pressure makes the bubble larger and the bread cooks more evenly inside
    - use a bit of oil or ghee(clarified butter) when stacking them to keep them soft.

    Wow 😊. Made these today EXACTLY as you showed in the video. These are perfect. I wanted a simple, soft and delicious wrap - and this was perfect. I filled it with a feta cheese salad and it was heaven. Just like you mentioned in the video - make sure the edges are well covered with the boiling water, or they do crisp right up. Based on this video and the perfect soft wraps, I will never buy wraps from the supermarket again. Thank you 🙏 🤩 😊.

    Thanks a bunch! Suuuuch a good recipe! I used it to make chicken wraps. It's a bit elastic, it's so easy and cheap, it's perfect!! I am planning on using it as Naan, with butter and garlic, to eat it with Indian food. Thanks again for the recipe!

      I haven't tried this one yet but it looks great. I saw a cool recipe for a pizza base using greek yogurt. Just search for "yogurt pizza base". On it's own (with no toppings) it's makes for a really nice thicker naan bread so you might want to give it a try!

    The boiling water activates the starch in the bread, that's what gives the elasticity. The same effect can be achieved by simply covering the pan with a transparent lid. You will find the tortillas to rise even MORE. Thank you for your work.

      Gives the pancakes a tangy taste from the lactobacillus, which I'm sure you know.

    This is a great recipe I used to call it paupers bread as it is so cheap quick and easy to do. I did put a tiny bit of butter in the saucepan doing mine but I think it was because I didn't have none stick like yours. Thanks for bringing back some really good times x

    Mexican here. If you want to make it closer to the ones made in Monterrey, use Vegetable shortening instead of oil. And if you want to make them Rural style go directly for Pork Fat.

      ​@@K1PPAH you can use a 10" or 11" lodge skillet. Unless you want larger tortillas, then just get a larger cast iron skillet, or carbon steel griddle. A few years ago, I got my wife a 1/4" thick carbon steel griddle that she can cook up to 6 good sized tortillas at once with 2 burners going. Her step mom was so jealous lol.

    The recipe is dangerously good. When you make this bread you have to restrain yourself not to finish it up in one fell swoop. This bread is excellent with hummus and all sorts of cold cuts. I was looking for a while to find something of this sort and finally I've got lucky. Thank you for posting the recipe.

    I've been making such flat bread for years now, nice way to creatively use left overs. And you don't have to complicate AT ALL. There is a reason flat bread is the oldest type of bread - it's simple.
    My method (quantities will depend on ingredients you use, some flour absorbs more water, some less).
    I use a coffee cup to measure, it holds about 150g of flour. For 4 tortillas - 2 cups of plain (all purpose) white flour, 1 cup of cold water, some salt, some vegetable oil. Combine ingredients in dough, keep dough slightly moist and barely sticking, divide into 4 pieces, make little balls, cover, leave to rest for 10 minutes (or more).
    While the dough is resting, you can prepare other ingredients, like chop the vegetables, etc. If you use onions, chop them, wash under cold water, salt, leave to rest. Thank me later. Then roll into tortillas, eyeball your pan size. Cook on high heat, use oil infused paper towel to oil the pan. After you drop it in pan, turn over when bubbles start forming. Cook about 20-30 seconds on other side, flip and check. I turn it over until I decide they are done. Don't worry about some burned spots, as long as you don't leave it in for too long and make it crumble.
    Store in slightly wet towel while still hot as you move to the next one. Keeping it wrapped in towel will make them steam and cook more. They will become soft after about 10 minutes. While tortillas are steaming and resting in the towel, I prepare/cook the filling. Then roll and serve.
    It usually takes me about 30 minutes or less to prepare the whole dinner and it's fun as well. I will usually eat 2 wraps, 3rd one is a bit too much, depends on filling as well.

    When dividing the dough, you will get more equal results if you divide in into thirds and then divide each third into four pieces.
    I've been making tortillas for many years, but I only use corn tortillas to make tacos. I use flour tortillas to make burritos and wraps.
    I'm watching this video from Palm Springs, but I grew up in Texas and have lived most of my adult life in California.
    I've been baking bread since I was seven years old (taught by my German grandmother), and my break won Grand Champion at the county fair when I was ten. I placed above four hundred other entries, almost entirely from women, since it was Texas in the early 1960s.

    I like using a taco press to quickly open these kind of flatbread (very inexpensive in Mexican stores btw). :) I just take a piece of the dough, roll them into as many balls/breads I want to eat that morning and into they press they go. Leftover dough that I won't eat that day goes back into the refrigerator, and there's hardly any mess or additional prepping. I make 3-4 big dough balls at once (one for each week, in the refrigerator 'till used), so there's one day every month when I take 40-50 minutes to make the basis for my breakfast for the whole month... And then pressing the dough, finishing it in a pan, cleaning it AND the press takes me no more than five minutes every morning. It's really, **really** time efficient if you prepare ahead of time.

    My favourite part is where you describe it as being for a "quick breakfast" when it needs, at my count, 10 minutes prep, 15 minutes rest, 12x2 minutes cooking, 30 minutes rest, and then you're able to actually use it as an ingredient in your actual breakfast.
    You need to start this about 80 minutes before you start making your breakfast.

      Yeah, it takes me most of an evening to make tortillas. Homemade tortillas are pretty awesome though. Make a bunch and keep them in the fridge/freezer.

    in Italy we call it "Piadina" and you can substitute the oil with animal fat for a different flavor.
    we use to fold it in half and fill it with anything you like, my favorited is soft cheese and ham

    En México se llaman tortillas de harina, h son más del norte. Se hacen con harina de trigo, manteca vegetal, sal y agua caliente ( no hirviendo ), la proporción es de 250 gr de manteca vegetal por cada kg de harina, sal al gusto y el agua necesaria para formar la masa suave. Se cocen y no llevan ni agua ni aceite después de cocer, porque no se ponen duras.

    Excuse me saying so, please, but 30 millilitres is 2 Tablespoons and not 2 teaspoons. One teaspoon holds 5ml and 1 tablespoon holds 15ml. Best regards.

    I find it very interesting that many cultures around the world have this same bread. It's called by dozens of names, probably hundreds of names that are lost to time. Tortilla, chapati , matzo, pita, Aish Baladi, saboob, kocho, and the list goes on. Great video.

      Most cultures that last any length of time develop some sort of flat bread... It's part of the progression from being a hunter-gatherer society to an agrarian one... They have some sort of grain that is local that they figure out how to grind up and make a meal / flour that can be mixed with water and cooked on a hot stone on a fire... And things progress from there... Eventually, they have excess grain and figure out how to make some sort of beer...

    in Brazil we call it Pão sirio or pita, we make it with or without baking powder depending on whether we want the filling on the outside or inside the dough. I individually like the filling on the outside

      I make tortillas all the time. I use 500 g flour, 10 g salt, 95 grams of vegetable lard (Crisco), and 1 cup of hot water + 2 tbs. KNEAD AND REST the dough. You want a dough consistency that will allow you to easily squeeze and cut dough balls from the edge of the ball dough you rested with your hands. If it's too tough to cut them, you did not add enough water. Flours do behave different. I make 50 gram balls and get about 17 tortillas. No need to add water when cooked. I also don't need to cut them out.

    The term flour is very unspecific. There are about 20 different types of flour in the shop. Which one shall I use?
    Two small tricks: put some flour in a small bowl and press the first time the dough balls flat in this bowl from both sides. You end up with the pice perfectly covered with right amount of flour. When you want to get a round shape: press the roll uneven while rolling (e.g. right hand when roll forward and left hand when roll backward). The dough will turn itself automatically, just roll all the time in the same direction.
