In very cold countries the batter can be kept in the warmer place for fermenting . In the oven with its lights on overnight . Or heat the oven up to 200 F degrees , put off (stop) the oven then place the batter with a plate under the vessel , in the heated oven . Repeat the same in the early morning too .

Everyone knows how to make idlis no doubt.....but mostly it turns out very rubbery, hard, sour and most unappetising. The way you have shown will be most useful to all in getting perfect soft idlis. Thank you for the invaluable guidance. Actually I am a madhwa brahmin. On top of the idlis we usually put tempered mustard. The side dish will be raw big brinjal roasted over open fire ( grilled) and cooked with dry red chillies in tamarind water. Most delicious with the flavour of smoked brinjal. This is a madhwa recipe. Please try...it is delicious with idlis.

Mami, I followed your instructions but my batter did not rise even after 12 hrs fermentation. I used mixer to blend and used parboiled rice (that is the rice I have). I blended them as you said, the uluntha after blending floated on water. The rice was blended corse. Then both were mixed for around 10 min by hand by throwing the batter for aeration. I could really use some help. My batter always does not rise, even when I use idli rice. Thank you

Mami I live in the US. Sometimes the ulundu batter is not as fluffy as seen in your video. It is very flat and the quantity of the batter is also very less for 1 cup of soaked ulundu. Is that due to the quality of the ulundu?
Mami especially for dosa we bought dosa rice. If suppose incase of shortage of dosa rice can we mix normal pacharisi rice with that? Is dosa will come ?
