Looks delicious as always!, but I'm adding banana leaf on the bottom of the roasting pan before adding water, then draping banana leaf on top of the shanks before covering with Aluminum foil. It's similar to cooking Pernil, and it adds that extra bit of flavor to it. Also to get that skin extra crispy on the outside, after roasting im giving it a bit of flame from a bakers torch ! ooppaa!!!
