Pallet wood… just make sure to check the markings on the pallets before you use them. Many the originate overseas are soaked in some pretty nasty chemicals for long-term fungus and insect control. This can be really bad for you, for skin contact and sawdust inhalation. Even domestic pallets marked with relatively safe treatments can be reused and come back from overseas being treated but unmarked.
If you wanted to upgrade the phone holder a bit, you could flock the groove. Having that soft velvety stuff in the groove would hide any troublesome areas in the slot and protect any device you put in there. It's more work than painting, but it comes out really nice.
Your cellphone holders are AMAZING... I've been making them also. I needed a cellphone holder for a few zoom calls during covid. I use a 5° cut on a 4x4 about 2 1/2 thick... Cheers Chuck in Michigan
So I've got something that's pretty similar to the American walnut stain that you love but is totally free. Used motor oil. I stain almost everything with it and it doesn't cost me a dime and looks great. It dries fast and actually makes the wood water resistant. So far, I haven't found any kind of topcoat that doesn't work with it once you let it dry.

I can see how it might be very dangerous to you if you consume it in some way but I fail to see how it can hurt anything if used as a wood stain, especially if covered by a topcoat unless the wood is burned later and you release that into the air.

Can you show us how to make cool gifts without very expensive tools such as the ones that you have. I am a single woman no garage and no way to even store them if I had them meaning the tools. Can you teach us how to make cool gifts without having very expensive tools to complete them. It was good when I got it , but the height/depth adjustment keeps slipping on me which is disconcerting. It could be user error tbh. I did like the deal that it was. Glad for the router/router table combo.
In the past year since I have made this video, I have learned way more regarding which finish is best to use in certain instances. You are 100% right... but it depends on how careful you are spilling your drinks on the trays ; ) But, yeah shellac is not good for this or wine caddies, etc., wipe-on poly or another oil-based finish is how to go.

Shallac is the worst finish for a beer tray... It is alcool based so it will be affected by the beer...
