Having completed the dex for these games I can safely say that the hardest for me to catch we're the flipping tiny first evolutions of certain Pokémon. Pichu, petlil (I think, or whatever else is close) and flapple were all difficult. What made it worse tho is I found them all in droves after I was done.
Also for anyone who lives under a rock and maybe doesn't know, quick balls make any Pokémon a cakewalk to catch in these games.

Surprisingly, I found the petlil line extremely difficult to catch. It was one of the last Pokémon I needed to complete the Pokédex and despite what is said about Petlil being a common spawn in the two small areas where it spawns, it is absolutely not a common spawn. It took me probably 2-3 hours before I ever even saw one Petlil, and I might have missed a few because they blend into their grassy habitats annoyingly well. All I saw were Capsakids for several hours before I finally found one. The problem is that Liligant is no better. As I was struggling to find a Petlil, I tried to find a Liligant instead, but their spawn is extremely rare and have equally small habitats. It was one of the most infuriating Pokémon to find because both of its forms were exceedingly difficult to find, meaning I couldn’t evolve or breed an easier to catch Mon on the evolutionary line like I could for Slakoth.

With the exception of slot 1, (and slot 2, but only because I havent gotten to area zero), none of these ever really caused me a problem. Glimmet I got lucky on (was a outbreak of Glimmet the first time I got to the psycic gym), but the rest were over and done with without any real problem. Then again, I tend to use great/net/ultra balls on the first of every pokemon past level 20.
The hardest ones for me to find are the rare and position specific pokemon, like Slakoth, Charcadet, Eevee and Applin. Glimmet might count in this category as well, but it seriously took me 30 min to catch two applin, and another 30 min (with sandwitch) to catch 1 Eevee.

I really don't get why Indeedee is on this list. Yeah, it's only found in one region.... but it's a big region, they're all over it, and it's very close to a Team Star base (and you will pass through it directly if you do objectives in level order).
It's one thing to say something is hard to catch because it only spawns in easy to miss caves, and not always. It's another to say that you can't catch it... unless you go to the entire northeast corner of the map which is where to find it. That's like saying you can't catch something in the safari zone if you don't go to the safari zone in one of the earlier games.
I also think the dragons need to be broken up. Catching a dratini or deino is relatively easy, simply because they're so readily available in different areas. A bunch of the other babies, too.
Frigibax, on the other hand, was WAY more of a pain. I haven't found anywhere it reliably spawns, at least. I've only even seen two in all my hours in the game so far (working on the second gym loop, main team in the 70s).

numbers 10 to 2 were super easy for me to catch.
10: i got them at a regular basis in the Dalizapa passage where they spawn right in front of the pokemon center
9: i caught one first try before i even took a single step through Los Platos
8: the only pseudo i had trouble with was Dratini (=20 ball). every other one took maybe 3 balls at most till they stayed in
7: i wasn't even looking for one. i was just jumping around the map, crashed don't know where excatly, saw one, started a fight and simply threw a ball. got it first try
6: i had beaten the titan and was simply climbing the mountain it was on for fun when i encountered one and got it second try (btw. that one was not the ex-titan, cause i threw my pokemon at it and that started the fight)
5: i was running through the desert full speed on my ride pokemon and got one first try
4: i didn't need the surf/swim ability to encounter one. i simply stood at Casseroya Lake, saw one near the shore looking at me, aimed with the LR button and hammered it in the face with my pokemon.
3: again didn't need surf/swim. i was looking for Zangoose walked past a pond saw one and threw my pokemon at it. again got one first try
2: caught two. one for myself and one to trade away for an Iron Valiant. had some trouble with the first one until i decided to just use a dusk ball since it was in a cave. second one i used a dusk ball right after getting it into the orange and caught it first try.
can't say anything about the ruins since i still haven't started with trying to get them.

Right after fighting the totem Bombirdier I tried to catch it and this thing swept me cause eventhough I managed to put it in the red I didn't have any status move and I had like 4 great Balls and then only Poke Balls.
Also I'd say catching the second Legendary is a pain in the a$$, especially if you're playing Violet cause since Miraidon is an Electric Type you can't paralyze it. Also since it's sets up Electric Terrain you can't put it to sleep either, at least until the Terrain is gone.

I caught the catchable Koraidon in a Luxury Ball thanks to a Critical Capture and weakening it. Honestly, weaken it and hock Ultra Balls or Dusk Balls if in caves or at night and it shouldn't be too hard to fail a capture. Some Pokemon are just obnoxious though and Pokemon that suicide are the worst. Haven't gotten to Miraidon in Violet yet but hoping I have the same sort of luck.

For me Orthworms are everywhere in the desert and construction area, just slithering along just doin their thing in my game. Of course I do get the ones peeking their heads out of the ground as well but I get just as many if not more above ground moving like a snake. It get scared if you approach it and when it runs away it uses its little arm/leg/tentacles that come out of all those blue holes to be able to get away quick from you. It looks extremely weird tbh. But I just thought that I’d share what the Orthworms do in my game bc it’s the exact opposite of what Mystic experienced with them. Also bc almost everything people have been saying about the game isn’t the case when it comes to my copy. It’s worked perfectly with no problems to very minimal things that every game has. But as far as crashes, or lagging/frame rate problems. Also none of those pokemon were hard to catch for me besides the 4 ruin legends and the addition Miraidon/Koraidon you can catch post game. And the 4 ruin ones weren’t extremely hard just a little difficult. I caught the snow leopard looking one with two halves of a sword in its mouth with my first throw, no condition, it was the1st turn of the encounter and I threw a dive ball bc their colors matched and was shocked. My brother looked at me and was like wait what the Hell you just walked up there threw a ball and was out peace lol. He said with a very jealous tone “you’re so lucky” like he yearned to have a bit of luck as well. Eventually he got a shiny Venomoth though. Then directly after I found a shiny Hoppip lol
