THE POLYNESIAN PEARL DIVER COCKTAIL - Part 1 - ALLSPICE DRAM LIQUEUR

  • I love the old film noir movies from the 40s and 50s. I watched one a little while back called The Blue Gardenia. The plot is your usual film noir fare, but what stood out to me in this one (what you could say as a plot device) was 2 of the characters drink a tiki cocktail called a Polynesian Pearl Diver. What's a Polynesian Pearl Diver? I had to have one! After doing some research I discovered it's one of the more obscure Don Beach cocktails. I also discovered how complicated it can be to make. It contains Don's Gardenia Mix. How fitting. To make the Gardenia Mix I need Pimento (allspice) Liqueur. I can't get that where I live so I'll have to make some from scratch. You can see how out of control this is going to get. So bear with me. This cocktail is going to take a few episodes to complete. But in the end, it will be worth it!

    PIMENTO DRAM LIQUEUR
    --------------------
    Ingredients
    1/4 CUP - DRIED WHOLE ALLSPICE BERRIES
    1″ PIECE - CINNAMON STICK
    1 - STAR ANISE
    3 - CACAO BEANS CRUSHED
    1 - VANILLA BEAN CUT AND SCRAPED
    1 1/4 - CUPS 151 PROOF RUM
    --------------------
    GRIND THE ALLSPICE BERRIES UNTIL THEY HAVE THE CONSISTENCY OF COARSE GROUND COFFEE.
    --------------------
    PLACE THE GROUND ALLSPICE ALONG WITH CINNAMON, STAR ANISE, CRUSHED CACAO BEANS AND VANILLA BEAN IN A SAUCEPAN WITH 1 1/4 CUPS OF RUM (151 PROOF IF YOU GOT IT) AND BRING TO A BOIL.
    --------------------
    TURN OFF THE HEAT, STIR AND COVER. REST FOR 5 MIN. THIS WILL MAKE A TEA.

    POUR THE GROUND BERRIES AND ALL INTO AN EMPTY STERILIZED GLASS JAR OR BOTTLE. SEAL IT AND LET IT SIT FOR AT LEAST 2 WEEKS, SHAKING IT DAILY.

    Thanks for the great Allspice Dram recipe Bruce. I just made this sans cocao nibs because i couldnt find any. Other than that i followed your instructions. The flavor is fantastic! This was one of the more involved methods i found on yt but well worth it. Recommended.

    I made mine as well since I haven't seen Allspice Dram in Alberta either. I used Lemonheart 151. It's a wonderful Tiki ingredient! It's good to see a bottle of Bacardi 151 in the wild. Reminds me of my late teen years!

      Where did you pick up a bottle of Lemonheart 151? I can't get that here in Ontario. I've always wanted to try it.

    "Pimento liqueur" is probably interchangeable with "allspice dram," since "pimento" is just the Jamaican term for the allspice bush. In the Southern US, pimentos (red peppers) go in cheese only.

      @@BarTalkCocktails Bad... But that's why it's always good to know the local meaning of a word... two words or terms can mean totally different things in different countries!
      Example: In Canada, "rye" doesn't have much rye in it, and is, as far as I know, a broad term for blended whisky. In the US, rye whiskey must have at least 51% rye grain in the mash.

    Can’t wait for the end result. Made my dram based on Kraken Rum and turned out great. Lots of options after the pearl diver. Use a 1/2 tsp in a Calvados old fashion to get a wonderful apple pie 🥧 tasting drink.

    I forgot my dram and now it's waiting for a month :D
    Will it still be OK or maybe too strong?
    I have used standard Bacardi carta blanca and not the overproof one

      I'm sure your Allspice Dram is fine but, the only way to be sure is to smell and taste it. I would imagine after a month the flavours will be intense. Just strain it out, make your simple syrup and continue by adding more rum to the mix. Let it sit quietly and mature for another 2-3 weeks occasionally shaking it up. You'll be good as gold. I'm so glad you made some. You won't be sorry. Cheers!

    Quick question. Are you using cacao nibs or cacao beans? The description says beans, but you refer to them as nibs during the video. I know the nibs are dried and beans are just raw beans. I really wanna make this, but i wanna get it right. Please let me know. Thank you for the time and effort that you take to make all these videos for us to enjoy.

      You could easily use spiced rum in place of 151. Often spiced rums will have complimentary flavours like candied citrus, caramel, etc. Cheers!

      @@BarTalkCocktails Well you may have a complete disregard for personal safety, but consider that your viewers probably don't wish to go out anytime soon, especially not in a ball of fire. It's not like you were throwing a splash of Pernod in the pan to flambe some seafood... Nearly a half bottle of 151 proof, spread out over a large pan and heated over open fire is a recipe for disaster.
      Honestly Bruce, I love your channel, and you need and deserve more subs. Try not to kill off your viewers, okay? Play safe, bud.
