Really fun boss. Since right now I'm just waiting for DMC V and Sekiro to come out, I decided to play this again and try to kill Nobunaga at Devilish mode.

Here's how to move like that: gfycat.com/neatdetailedhare You press and hold the R1 button, then you use the left analog stick to dash towards the direction you want. For example if you want to dash to the left, you hold R1, move the left analog stick to the left then bring it back to the middle, then move it again to the left. If you do that very quickly, then you get to move like how I'm doing in the video.
